Cauli flower Potato Masala

Vegan Delight :)
 Ingredients (Serves 3 to 4 people)

Cauli Flower: 1 ½ Cups
Potato: 1 Cup
Onion: 1
Tomato: 1
Curry Leaves
Corriander Leaves
Green Chilli: 3 - 4
Ginger Garlic Paste: 1 ½ Tea Spoon
Red Chilli Powder: 1 ½ Tea Spoon
Turmeric Powder: 1/4 Tea Spoon
Salt
Garam Masala Powder: 1 Tea Spoon
Oil: 2 Table Spoon
Water: 1/4 Cup
Cooking Time: 20 to 25 minutes
Method

Pour Oil to a pan
Add Onion, Green Chillies and ginger-garlic paste and saute till onion becomes tender
To this, add turmeric powder, red chilli powder, garam masala powder and salt
Add potato and stirr well
Close the lid and cook in low flame for 5 minutes
To this, add cauli flower and tomato
Stirr well and add 1/4 cup of water and close the lid and cook in low flame
Once the vegetables cooks well, open the lid and stirr well
And add curry leaves and coriander leaves
Serve hot with rice or roti

Pazham Pori/ Ripe Banana Fritters

If you are a malayalee, you will want this now :)
Ingredients (Makes 6 pieces)

Banana(Nethrapazham/ Ethakka) : 1 - 2
Maida: 1 Cup
Water
Sugar: 1 - 2 Tea Spoon
Salt : 1 Pinch
Oil: For Frying

Cooking Time: 8 to 10 minutes
Method

Slice the banana length wise. 
Add sugar and salt to the maida and mix well
Add water to it and make it a medium thick paste. 
The consistency of the maida paste should  not be too thick. If you take it in your hands it should drip down easily without forming lumps.
Heat the oil in a pan
Take each slices of banana, dip it full in the maida paste and put it in hot oil and deep fry.

Ghee Rice and Chicken Stew


Rich and tasty Neychoru(Ghee Rice) and Chicken Stew



Ghee Rice (Neychoru)
Ingredients (Serves 3 to 4 people)

Biriyani rice/ Basmathi rice: 3 Cups
Cinnamon Stick : 1 inch
Cardomom: 4 -5
Salt
Ghee: 3 - 4 Table Spoon
Oil: 3 - 4 Table Spoon
Water: 6 Cups
Lemon: 1
Onion: For Garnish
Cahewnuts: For Garnish
Raisins: For Garnish

Cooking time: 30 to 35 minutes
Method

Wash the rice and strain off all the water well.
To a pan, add 3 table spoons of ghee and 3 table spoons of oil.
Add cardamom and cinnamon to it
Now add rice and fry the rice till it starts to pop.
Take double ratio of water to rice.That is, for 1 glass of rice, 2 glass of water.
Boil water and pour it to rice
Add salt to taste and squeeze a lemon to it.
Stir well and cook rice in low flame.
For garnishing, fry onion, cashew nuts and raisins in ghee and add to rice
Chicken Stew

Ingredients (Serves 4 to 5 people)

Chicken: 500gms
Potato :1/2 Cup
Onion: 2
Green Chilly: 7 - 8 (increase if you want to make it more spicy)
Ginger Crushed: 1 Table  Spoon
Black Pepper Crushed : 1 Tea Spoon (increase if you want to make it more spicy)
Cinnamon – 1  - 2 piece
Cloves – 3Thin
Thin Coconut milk: 11/2 Cup (taken second time)
Thick Coconut milk: 1/2 Cup (taken first time)
Curry leaves
Salt
Coconut Oil : 1 Table Spoon

Cooking Time: 20 to 25 minutes
Method

To a pan, add Chicken, Potato, Onion, Green chillies, Cinnamon, Cloves and Crushed Ginger
Add thin coconut milk and salt and cook well
Once cooked, add thick coconut milk and curry leaves
No need to boil after adding the thick coconut milk.
Let it heat in low flame.
Add the crushed black pepper and mix well
Switch off the flame, pour coconut oil and close the lid and keep aside for some time

Note
To make the stew more rich and thick you can add a table spoon of cashew nut paste also

Chocolate Cake Pudding


Who doesn't like chocolate? And chocolate cake pudding...mmmm......
Ingredients (Serves 8 to 9 People)

Chocolate Cake: 250 gm
Milk: 1/2 Litre
Sugar: 4 - 5 Table Spoon
Cherry
Cashewnuts
Custard Powder: 1 Table Spoon
Gelatin: 1 Table Spoon
Water: 1/4 Cup
Vanila Essence 2 - 3 drops

Cooking Time: 25 to 30 minutes
Method

Powder the chocolate cake
Make Sugar syrup by mixing 1 Table Spoon of Sugar in 1/4 Cup of water.
Soak gelatin in little cold water, once completely soaked make hot water and keep the gelatin container on top of it.Make the gelatin to liquid form
Boil half of the milk adding 2 Table spoons of sugar, to this add liquid gelatin
Add vanilla essence to the milk
Pour this to a setting tray
Once this cools put the powdered cake on top and sprinkle the sugar syrup
Put the cashew nuts and cherry on top.
Dissolve custard powder in little milk
Boil rest of the milk by adding 2 table spoons of sugar
Once the milk boils well add the dissolved custard powder stir well and let it boil well.
Pour this on top of the cake pudding and keep for setting
Decorate as per your wish and serve cold
