Coffee Pudding

Coffee in the morning? Coffee pudding anytime!
 

Ingredients
Milk : 200ml
Condensed milk : 5 Table spoon
China grass / Agar agar : 5g
Water : 1/2 cup+1/4 Cup
Instant Coffee Powder: 1 Table Spoon

Cooking Time: 5 to 8 minutes

Method

Soak china grass in 1/2 cup of water and keep aside
Mix coffee powder in 1/4 cup of water and add it to the milk
Add condensed milk to the above mixture

Heat this mixture in medium flame and let it boil
Once the china grass is completely soaked, keep in low flame and let it melt completely
Strain this liquid and add it to the milk mixture and stir well
Pour this mixture into the setting tray and allow to cool
Keep in fridge.
Serve cold with some grated chocolate on top

Note
Increase or decrease the sweetness as per your wish

Chilly Fish

Ah! that spicy tasty sea food :)


Ingredients

Boneless fish: 500gms (Cut into cubes)
Corn flour: 1 Table Spoon
All Purpose Flour / Maida: 2 Table Spoon
Ginger Garlic Paste: 1 Table Spoon
Red Chilly Powder: 1/2 Table Spoon
Onion: 2
Green Chilly: 3 - 4
Crushed Ginger: 2 Table Spoon
Crushed Garlic: 2 Table Spoon
Turmeric Powder: 1/2 Tea Spoon
Kashmiri Red chilly Powder: 1 Table Spoon
Tomato Sauce: 1 Table Spoon
Pepper Powder: 1/2 Table Spoon
Oil: 2 Table Spoon+ For Deep Frying
Corrinder Leaves: Optional
Salt
Water

Cooking Time: 20 to 30 minutes
Method

Make a batter with corn flour, all purpose flour, ginger garlic paste, 1/2 table spoon red chilly powder and little salt
Add the fish to it, marinate well and keep for 10 minutes and then deep fry in oil till it becomes slight brown in color
To a pan pour 2 table spoon of oil and add chopped onion
Once the onion becomes tender add crushed ginger, garlic and green chilli
Once the raw smell goes add turmeric powder, kashmiri red chilly powder and salt and saute for 2 minutes in low flame
To this add tomato sauce and give a good stir
Add 1/4 cup of warm water and let it boil
Add the fried fish to it and blend in well
Add pepper powder and stir slowly
 If you need a thick gravy mix 1/2 table spoon of corn flour in little water and add it to the curry
Serve hot

Note
Can try variations adding corinader leaves or capsicum and chopped spring onion
I have used king fish for this recipe.  You can use any fish with firm flesh (debonned)
Can use tilapia/cod/seer etc or use fish fillets/nuggets

Orange Pudding with Biscuit Crust

A biscuit base with tasty orange pudding. You would love it :)


Ingredients (Would Serve 5 to 6 people)

First Set of Ingredients

Marie Biscuit: 150gms
Salt less Butter: 100gms
Powdered Sugar: 3 Table Spoon

Second Set of Ingredients

Sugar: 8 to 10 Table Spoon
Gelatin: 2 Table Spoon
Orange Juice: 200ml
Egg Yolk: 4
Cold water: 1/2 Cup

Third Set of Ingredients

Sugar: 2 Table Spoon
Egg White : of  4 eggs

Preparation time: 1 Hour
Cooking time: 20 minutes

Method

Soak gelatin in cold water
Grind the marie biscuit to a powder and mix it well with the powdered sugar and butter
Layer this on to your setting tray.  Press it well to the bottom of the setting tray using a spatula

Keep this in fridge for 1 hour
Beat the egg yolk well and add orange juice and sugar to it and mix well
Double boil the soaked gelatin and make it a liquid and add it
Keep the mixture in low flame for about 10 to 15 minutes and allow it to cool little
Beat the egg white adding sugar using a hand mixer and make it like a foam
Add the foamed egg white to the orange juice mixture and fold in well

Pour this on top of the biscuit layer and keep in fridge for setting
Before serving pour a little orange juice on top


Note

Take the pudding out from the fridge just before serving, because the biscuit layer will melt soon.

To enhance the orange flavor can add little orange zest too.

If you get orange flavored marie biscuit can use the same

A Quick and easy Vegetable Salad

Salads are fresh. Salads are delicious.Salads are healthy....


Ingredients

Salad cucumber: 2
Carrot: 2
Cauli Flower: 1
Spring onion: 5 to 8 strands
Cabbage: 1/2 Cup
Onion: 2
Tomato: 2
Lemon: 1
Olive Oil: 2 Table Spoon
Green Chilli: 3 to 4
Salt

Method
Clean and cut all the vegetables
Split the green chillies and add it
Squeeze the lime onto it and add required salt and olive oil and mix well
Serve fresh.

Soya Chunks and Vegetable Biriyani

Here is the 100th :). It's veg, yet tastes like non veg. Tasty yet fit for the diet conscious..Isn't this the apt choice for the 100th?

Ingredients (Serve 2 to 3 People)

Basmati / Biriyani Rice: 500gms
Chopped Carrots: 1/2 Cup
Chopped Beans: 1/2 Cup
Green Peas: 1/2 Cup
Soya Chunks: 1 Cup
Bread slices: 3 - 4
Ginger : 25gm
Garlic : 25gm
Green Chillies : 50gm
Coriander Leaves : 50gm
Mint Leaves : 25gm
Tomato : 2 nos
Onion  : 4 nos (includes 1 for garnishing)
Cashew : as necessary
Raisins : as necessary
Cloves : 5 nos
Cardamom: 3 nos
Cinnamon :  2 nos
Curry Leaves : as necessary
Ghee : 6 table spoon (3+3)
Oil : 3 table spoon
Salt : to taste
Turmeric powder : 1 pinch
Chilli powder : 1/ 4 table spoon
Garam masala : 1/4 tea spoon
Lemon : 2 nos

Cooking Time : 40 Minutes

Method:
Soak soya chunks in water and keep aside
Crush ginger, garlic, green chillies, coriander leaves and mint leaves.
Chop onion and  tomato.
To a pan add little oil and saute 2 onions till it cooks
To this add crushed ginger, garlic and green chilly and saute for 2 to 3 minutes
Now add chopped carrots, beans and green peas and salt
Squeeze water from the soya chunks and add it too
Saute the mixture for around 3 to 5 minutes
Then add the required water and cook the mixture well.
Now add crushed coriander leaves and mint leaves and give a good stir and switch off the flame
Wash the rice.
To a pan add 3 table spoons of ghee and 3 table spoons of oil.Add cardamom, cloves and cinnamon to it
Now add rice and fry the rice till it starts to pop.
Take double ratio of water to rice.That is, for 1 glass of rice, 2 glass of water.
Boil water and pour it to rice
Add a pinch of turmeric, garam masala powder, salt to taste and squeeze a lemon.
Stir well and cook rice in low flame.
Once the rice cooks well add the veg masala  and mix well
Close the lid and keep in low flame for another 5 to 10 more minutes
Serve hot

To garnish :
Fry 1 onion , cashew and raisins
Chop the bread slices into cubes and fry in oil till golden brown
Dice few coriander  leaves.
Add little lime juice

Note

If you want to reduce the amount of oil / ghee you can pressure cook the rice and then mix the vegetable masala
But make sure that the rice does not over cook and become mushy
