2 Minute Chocolate Mug Cake

The quickest and easiest cake!!!!
Ingredients

All Purpose flour/Maida: 2 Table Spoon
Coco Powder: 2 Table Spoon
Sugar: 2 Table Spoon
Egg: 1
Oil: 1 Table Spoon
Baking Powder: 1 Pinch
Milk: 1 Table Spoon

Requirement: Microwave Safe Coffee Mug
Cooking Time: 2 Minutes
Method

Crack the egg and put it in the mug and slightly beat it using a fork
Now add all the other ingredients and combine well
Microwave in high power for 2 minutes.
You can see the cake rising up. Just touch it and see, if its firm then your cake is ready.
Take a fork and start eating...

Tiramisu

The very famous Italian Dessert!!!
Ingredients

Savoiardi Ladies finger biscuit: 1 Packet
Egg: 4
Sugar: 3/4 Cup
Milk: 1 Cup
Mascarpone  Cheese: 250gm
Instant Coffee Powder: 1 Table Spoon
Hot water: 1 Cup
Coco Powder: 2 Table Spoon

Cooking Time: 30 mintues
Setting Time: 6 to 8 hours

Separate the egg white and yolk
Add coffee powder to the hot water and let it cool

Combine milk and sugar.  To this add the egg yolks and beat well
By double boiling method cook this milk mixture until it forms a thick custard.  (Stir continuously)
Once done let the custard cool well
Beat the mascarpone cheese and combine it with the custard and keep aside
Beat the egg white until stiff and fold in to the cheese custard mix
Now assembling
Dip each biscuit in the coffee very quickly and layer it on the bottom of the setting tray.  You might have to break one or two biscuits so that the entire bottom of the tray is layered with the biscuit.
Now pour a layer of the cheese custard mix
The biscuit layer should be covered well with the cheese custard mix
Again place a layer of the biscuits dipped in coffee and then pour the cheese custard mix. The biscuits should be arranged well so that the entire cheese mix is covered
The final layer should be the cheese custard mix
Cover the tray with an aluminium foil and keep in refrigerator for 6 to 8 hours
Before serving dust the coco powder
Serve cold
Note:
You can put the coco powder in a tea strainer and dust it all over the tiramisu
You can dust with coffee powder or chocolate powder if you like the taste

Shish Taouk/Tawook

Another Middle Eastern Delicacy!!!!
Ingredients

Boneless Chicken: 1 Kg
For marination
Fresh Lime Juice: 5 Table Spoon
Garlic Powder: 2 Table Spoon
Ginger Powder: 1 Tea Spoon
Oregano: 1 Pinch
Paprika: 1 Tea Spoon
White Pepper Powder: 1 Tea Spoon
Yogurt: 4 Table Spoon
Olive Oil: 3 Table Spoon
Apple Cider Vinegar: 1/4 Table Spoon
Tomato Paste: 1/2 Tea Spoon
Salt

Preparation Time: 4 Hours
Cooking Time : 20 minutes
Method

Cut the chicken to small cubes
To a bowl put all the things mentioned under for marination and combine well
To this add chicken and marinate well and keep in fridge for a minimum 4 hours
Heat the grill and drizzle some olive oil and place the chicken on the grill.  You can skew it on metal or wooden skewers and place on the grill
Cook until done.  Do not over cook as the chicken will become dry.
Serve hot with pita bread, tortilla or roti along with garlic sauce and grilled vegetables

Red Velvet Cake with Cream Cheese Frosting

Yummy cake with yummy frosting!!!!!

Ingredients

All Purpose Flour / Maida: 2½ Cups
Coco Powder: 1/4 Cup
Sugar: 1½ Cups
Egg: 2
Butter: 1 Cup(At Room Temperature)
Butter Milk: 1/2 Cup
White Vinegar: 1 Tea Spoon
Baking Soda: 1 Tea Spoon
Permitted Liquid Food Color Red: 2 Table Spoon
Vanilla Essence: 1 Tea Spoon


For Frosting
Cream Cheese: 1 Cup
Butter: 1/2 Cup
Sugar: 1 Cup
Vanilla Essence: 1 Tea Spoon

Cooking Time: 45 Minutes
Method

Beat butter and sugar until smooth
To this add one egg at a time and beat well
Add vanilla essence and mix
Add food color to butter milk and keep aside
Mix coco powder and all purpose flour
Preheat the oven at 180 degree
To the butter-sugar-egg mixture add little flour mix and little color added butter milk and mix

Repeat the same until all the flour mix and butter milk mixture is added and combine well to make a smooth batter
Add baking soda to vinegar.  You will notice that it frizzes out.
Quickly add it to the cake batter and fold in well


Pour the cake mixture to a prepared cake tin and place in the oven and bake for 40 to 45 minutes
Insert a tooth pick in the center of the cake and check, if it comes out clean then the cake is ready
Once the cake is done remove from oven and allow it to cool

Trim the top part of the cake and slice the cake horizontally into 2 layers
Beat together everything mentioned under for frosting until it becomes fluffy

Place a layer of cake on the setting tray.  Apply a generous amount of cream cheese frosting and spread
Now place the second layer of cake and apply the frosting all over the cake
Put some cream cheese frosting in a piping bag and garnish as per your imagination

I crushed the trimmed part of the cake and covered the cake with it after applying the cream cheese
