Dates Chutney

Its Sweet, Spicy and Sour...
Ingredients

Dates: 10 Numbers
Shallots: 5
Garlic: 3
Dried Red Chilly: 8 - 10
White Vinegar: 2 - 3 Tea Spoon
Oil: 1 Table Spoon
Salt

Cooking Time: 5 Minutes
Method

To a kadai pour oil and add shallots, garlic and dried chilly
Saute on low flame for some time
Remove the seed from the dates and add it.  (I used sesame coated dates. Just plain ones is fine)
Saute for a few seconds and switch off the flame and let it cool down
Once cooled take it to a mixer and add salt and vinegar
Add little water and grind it to a paste
Goes well with biriyani
Note:
Adjust the amount of red chilly and vinegar as per your taste buds.  
Lesser the amount of water darker the color or your chutney

Chicken Biriyani in Pressure Cooker (Zero Oil / Ghee Recipe)

Oil Free Biriyani.....Means Low Calories....
Ingredients

Basmati Rice  : 3 Cups
Hot Water: 3 Cups
Chicken: 1 Kg
For Marination
Sliced Onion: 3
Crushed Ginger: 2 Table Spoon
Crushed Garlic: 2 Table Spoon
Crushed Green Chilly: 8
Chopped Tomato: 1 Big

Chopped Coriander Leaves: 2 Table Spoon
Chopped Mint Leaves: 2 Table Spoon
Curry Leaves: 2 Sprig
Turmeric Powder: 1/2 Tea Spoon
Garam Masala Powder: 1 Tea Spoon
Yogurt: 1 Table Spoon
Cinnamon Stick: 2 Inch Piece
Cloves: 4
Cardamom: 4
Bay Leaf: 1
Lime Juice: 2 Table Spoon
Salt

Cooking Time: 15 Minutes
Method

Clean and wash the chicken and cut it to pieces
Marinate the chicken with the ingredients mentioned under for marination and keep it aside for some time
Wash the rice and strain it  and keep aside
To a pressure cooker put the marinated chicken along with the marinade
Add the washed rice
Pour hot water.  Water should be just above the rice.  So adjust the amount of water accordingly.  Do not add more water
Mix well and close the cooker and switch on the flame
After 1 whistle switch off the flame and let the pressure go completely
Open the cooker and stir slowly
Serve hot with pickle and salad

Keema Paratha/ Minced Meat Paratha

Have it for breakfast or lunch or dinner!!!!
Ingredients


Wheat Flour / Atta: 2 cup + Extra for dusting
Oil: 1 Table SpoonWarm Water
SaltFor Filling:
MincedChicken: 1 Cup
Onion: 1 Big
Green Chilly: 2
Ginger: 1 Small Piece
Fennel Seeds: 1/2 Tea Spoon
Turmeric Powder: 1/4 Tea Spoon
Chilly Powder: 1/2 Tea Spoon
Garam Masala Powder: 1/2 Tea Spoon
Oil: 1 Table Spoon
Salt


Cooking Time: 20 to 25 minutes
Method

Add oil and required salt and water to the atta and make a smooth dough and let it rest
Making keema filling
Pour oil to a pan and add the fennel seeds.
Add chopped ginger and green chilly and saute for 2 minutes
Now add fnely chopped onion and saute for 5 to 6 minutes
Now add turmeric powder, red chilly powder, garam masala powder and salt
Saute until the raw smell of the spice powder is gone
Now add the miced chicken and cook well.  You can add chopped coriander leaves too
Keep it aside
Take small portions of dough
Dust some flour on your rolling board and make small rotis
Keep little keema mixture in the roti
Now fold it from all sides and make it a ball
Again roll this and make the roti
Or you can make 2 rotis and place the filling on one roti and cover it with the other roti (Place the second roti on top ) and seal the edges and the slightly roll it again.
Heat a tawa and place the paratha.
When one side is done flip and cook the other side
Brush a little butter or ghee on both sides and cook for a few more seconds
Serve hot

Note
Can be served plain as a snack or as a meal with dal/curd/pickle
You can use any meat of your choice

Egg less Banana Chocolate Cup Cakes

One of my favorites!!!!
Ingredients

All Purpose Flour/Maida: 1½ cups
Ripe Banana: 3 Medium size
Powdered Sugar: ½ Cup
Coco Powder: ½ Cup
Baking Powder: 1 Tea Spoon
Baking Soda: ½ Tea Spoon
Vegetable Oil: ¾ Cup
Thick Yogurt: 1 Table Spoon
Vanilla Essence: ½ Tea Spoon
Milk: ¼ - ½ cup
Chocolate Chips: ½ Cup

Cooking Time: 20 minutes
Method

Mash the banana using a fork
Preheat oven at 200 C
Combine all purpose flour, coco powder, baking powder and baking soda
Sieve the mix and keep aside
To a bowl add oil, powdered sugar, yogurt and vanilla essence
Beat  until well combined
Add mashed banana
To this add sieved all purpose flour mix in batches along with milk and make a smooth ribbon consistency batter
Add choco chips and vanilla essence. (Keep a few chocolate chips to sprinkle on top)
Fold in the chocolate chips into the batter
Grease the muffin tray or line it with paper liner. (I have used individual muffin cups)
Fill the cups 3/4 with the batter and sprinkle few chocolate chips on top
Bake for about 20 minutes. After 20 minutes check by inserting a wooden skewer or tooth pick in the center.  If it comes out clean then the muffins are ready.
Take out the muffins from the oven and let the muffins cool completely on a wire rack
Serve as breakfast, or snack or dessert
Note:
Cooking time may vary depending on the oven, so adjust it accordingly
The muffins are not too sweet, if you wish to make it more sweet increase the amount of sugar or chocolate chips
Baking time may vary depending on the oven, so adjust it accordingly

Al Faham Chicken / Arabian Grilled Chicken

Another Arabian Delicacy!!!
Ingredients

Whole Chicken: 1 (Approx weighing 1 Kg with skin)
Olive Oil: 1 Table Spoon
For Marination
Onion : 1 Small
Ginger : 1/2 Inch piece
Garlic : 3 Cloves
Green Chilly: 2
Tomato: 1 Small
Yogurt : 1 Table Spoon
Lemon juice :1 Table Spoon
Pepper : 1/2 tea spoon ( Increase if you want it more spicy )
Olive oil : 1 Table Spoon
Arabic Masala : 2 Tea Spoon
Salt 

Cooking Time: 45 to 50 Minutes
Method

Clean and wash the chicken well
Cut chicken into 2 pieces length wise or cut it to 4 pieces
Using a fork or knife prick the chicken well so that the marination goes inside the chicken
Take all the ingredients mentioned under for marination
Grind it to a fine paste
Marinate the chicken with this paste and cover and keep in fridge for 3 to 4 hours. It's good if you can leave it over night
Grill it on a charcoal grill turning sides in between and brush some olive oil each time
Here i grilled it in an oven
For that pre heat the oven at 200 C
Place the chicken on the grill tray.  You should place another tray below so that all the drippings get collected in it
Grill for about 45 to 50 minutes turning sides in between and brush some olive oil each time
Serve hot with kuboos, chapathi or roti with some salad lemon wedges and any dip of your choice

Healthy Mixed Fruit Ice Cream

Ice Creams can be made healthy!!!
Ingredients

Banana : 2
Strawberry: 6 - 7
Apple: 1
Honey: 2 Tea Spoon
Chilled Milk: 2 Table Spoon

Cooking Time: Nil
Preparation Time: Overnight
Method

Take all your fruits
Peel and chop the banana to small pieces
Same with apple and strawberry
Freeze the chopped fruits overnight
Add all the frozen fruits to a food processor
Switch on the processor in medium speed for 5 to 6 minutes
Now scrape down the sides and add honey and milk
Switch on again in medium speed for 4 to 5 more minutes
Now transfer the ice cream to a container and freeze it for another 2 to 3 hours
Scoop and serve your ice cream
Note:

You can use any fruit of your choice
Make chocolate ice cream with frozen banana and coco powder
Increase or decrease the amount of honey as per your requirement
