മീൻ അച്ചാർ / Meen Achar / Fish Pickle

Kerala Fish Pickle...
Firm flesh fish: 500gm (I used Tuna)
Ginger: A large piece
Garlic: 15 Cloves
Green chillies: 5 nos
Chili powder: 4 Table Spoon
Turmeric powder: 1/2 Tea Spoon
Gingelly Oil :Half Cup
Asafoetida Powder: 3/4 Tea Spoon
Fenugreek powder: 1/4 Tea Spoon
Vinegar: 5 Table Spoon 
Curry leaves: 3 Sprigs
Mustard: 1/2 Tea Spoon
Hot water: 1 Cup
Salt

Wash the fish thoroughly, clean and cut into small pieces
Add some turmeric powder, chilly powder and salt, mix well and set aside for a while
Pour half of the gingelly oil into a pan and fry the fish pieces well
Crush the ginger, garlic and green chillies
Pour the remaining gingelly oil to a pan and splutter the mustard seeds 
Add crushed green chillies, ginger, garlic and curry leaves and fry till light brown in color.
Add chilli powder, turmeric powder, asafoetida powder and salt and fry on low heat for 10 minutes.
Add hot water and bring to a boil
Add fried fish with the oil and let it boil for 5 minutes, add vinegar and fenugreek powder and turn off the heat.
When it cools down transfer to a clean and dry glass jar and use as needed. 

ദശ കട്ടി ഉള്ള മീൻ: 500gm (ഞാൻ ചൂര ആണ് ഉപയോഗിച്ചത് )
ഇഞ്ചി : ഒരു വലിയ കഷ്ണം
വെളുത്തുള്ളി : 15 അല്ലി
പച്ചമുളക് : 5 എണ്ണം
മുളക് പൊടി : 4 ടേബിൾ സ്പൂൺ
മഞ്ഞൾ പൊടി : 1/2 ടി സ്പൂൺ
നല്ലെണ്ണ :  അര കപ്പ്
കായം പൊടി : 3/4 ടി സ്പൂൺ
ഉലുവ പൊടി : 1/4 ടി സ്പൂൺ
വിനാഗിരി : 5 ടേബിൾ സ്പൂൺ
കറിവേപ്പില : 3 തണ്ട്
കടുക് : 1/2 ടി സ്പൂൺ
ചൂട് വെള്ളം : 1 കപ്പ്
ഉപ്പ്‌

മീൻ നന്നായി കഴുകി വൃത്തിയാക്കി ചെറിയ കഷ്ണങ്ങൾ ആക്കി മുറിച്ചെടുക്കുക
കുറച്ചു മഞ്ഞൾ പൊടി,  മുളക് പൊടി,  ഉപ്പും ചേർത്ത് നന്നായി പുരട്ടി കുറച്ചു നേരം മാറ്റി വെക്കുക
ഒരു പാനിലേക്കു പകുതി നല്ലെണ്ണ ഒഴിച്ച് മീൻ കഷ്ണങ്ങൾ നന്നായി വറുത്തെടുക്കുക
ഇഞ്ചി, വെളുത്തുള്ളി , പച്ചമുളക് എന്നിവ നന്നായി ചതച്ചെടുക്കുക
ബാക്കി നല്ലെണ്ണ ഒരു പാനിൽ ഒഴിച്ച് കടുക് പൊട്ടിക്കുക
ഇതിലേക്ക് ചതച്ചു വെച്ച പച്ചമുളക് , ഇഞ്ചി ,  വെളുത്തുള്ളി , കറിവേപ്പില എന്നിവ ചേർത്ത് ഇളം ബ്രൗൺ നിറം ആവും വരെ വഴറ്റുക
തീ നന്നായി കുറച്ചു ബാക്കി ഉള്ള മുളക് പൊടി, മഞ്ഞൾ പൊടി, കായം പൊടിയും ഉപ്പും ചേർത്ത് നന്നായി ഒരു 10 മിനിറ്റ് ചെറിയ തീയിൽ വഴറ്റുക
ഇതിലേക്ക് ചൂട് വെള്ളം ചേർത്ത് നന്നായി തിളപ്പിക്കുക
വറുത്തു വെച്ച മീൻ എണ്ണയോട് കൂടി ചേർത്ത് നന്നായി ഒരു 5 മിനിറ്റ് തിളപ്പിച്ചു വിനാഗിരി, ഉലുവ പൊടി എന്നിവ ചേർത്ത് തീ ഓഫ് ചെയ്യുക
നന്നായി തണുത്തു കഴിയുമ്പോൾ കുപ്പിയിൽ ആക്കി ആവശ്യാനുസരണം ഉപയോഗിക്കാം

Fish Pickle / Meen Achar

A spicy and tasty fish pickle for all the pickle lovers here!!!
Ingredients

Fish : 500 gms
Ginger: 2 Inch Piece
Garlic:  15 - 20 Cloves
Green Chilly: 2 - 3
Red Chilly Powder: 4 Table Spoon
Turmeric Powder: 1/2 Table Spoon
Fenugreek Powder: 1/2 Tea Spoon
Asafoetida Powder: 1/2  Tea Spoon
Gingelly Oil / Nallenna: 1/2 Cup
Mustard Seeds: 1/4 Tea Spoon
Hot Water: 1 Cup
Vinegar: 3 - 4 Table Spoon
Salt

Cooking Time: 30 Minutes
Method

Clean the fish and cut to small bite size cubes. Squeeze out as much as water possible.   Here i have used tuna but you can use any firm fleshed fish
To the cleaned fish add little turmeric powder, red chilly powder and salt.  Marinate it well and keep aside for some time
Crush the ginger, garlic and green chilly
To a pan pour half of the gingelly oil and fry the fish
You need to fry the fish until its crispy
To another pan pour rest of the oil and add mustard seeds.
Once it splutters add crushed ginger, garlic, green chilly and curry leaves
Saute until it becomes light brown in color
Reduce the flame and add the balance chilly powder, turmeric powder, asafoetida powder and some salt
Saute until the raw smell of the spices are gone.  (For about 8 to 10 minutes in low flame)
Add hot water.  (Refer Notes)
Let it boil well
Now add the fried fish along with the oil.
Let it boil well for some time
Switch off the flame and add vinegar and fenugreek powder.
It might look thin but once it cools down it will thicken up
Serve with rice or porridge
Store in clean airtight glass jars
Note:
Adjust the spice levels accordingly
I personally like the pickle with some gravy so i add hot water.  But if you wish to have a thick pickle without or less gravy you can reduce the amount of hot water added or even completely avoid adding hot water.

Kakka Irachi Achar / Clam Meat Pickle

Spicy tangy pickle...
Ingredients

Kakka Irachi / Clam Meat: 500gms
Ginger: 1 Big Piece
Garlic: 10 Cloves
Green Chilly: 2 - 3
Red Chilly Powder: 3 Table Spoon
Turmeric Powder: 1/2 Table Spoon
Fenugreek Powder: 1/2 Tea Spoon
Asafoetida Powder: 1/2 Tea Spoon
Gingelly Oil / Nallenna: 6 Table Spoon
Mustard Seeds: 1/4 Tea Spoon
Hot Water: 1 Cup
Vinegar: 3 - 4 Table Spoon
Salt

Cooking Time: 20 Minutes
Method

Crush the ginger, garlic and green chilly
Wash the clam meat well.  You can see a black color dirt in the bottom of the clam.
Using a tooth pick or a pointed knife edge just prick it. It will come off easily.
Clean each clam the same way and then wash it well and squeeze out the water
You a need a lot of time and patience to do it.  But its good to remove the dirt from the clams so that it doesn't upset your stomach
Add little turmeric powder, red chilly powder and salt
Marinate it well and keep aside for some time
To a pan pour half of the gingelly oil and fry the clam meat
To another pan pour rest of the oil and add mustard seeds.  Once it splutters add crushed ginger, garlic, green chilly and curry leaves
Saute until it starts to change color
Reduce the flame and add the balance chilly powder, turmeric powder, asafoetida powder and some salt
Saute until the raw smell of the spices are gone.  (For about 8 to 10 minutes)
Add hot water and let it boil well (Refer Notes)
Now add the fried clam meat with the oil and let it boil for some time
