Rava Bread Idli

Let`s try a different Idli today!!!
Ingredients

Bread: 5 Slices
Roasted Rava / Semolina: 1 Cup
Curd: 1/2 Cup
Baking Soda: 1/4 Tea Spoon
Salt
Water

Cooking Time: 8 to 10 Minutes
Preparation Time: 25 Minutes
Method

Chop the bread slices coarsely and put it in a mixer jar and powder it
To a bowl add the powdered bread slices
To this add roasted rava, curd, baking soda and salt
Add required water and make a thick batter
Let the batter rest for 25 minutes
Grease the idli moulds with oil and pour spoonful of batter to each mould
Steam for 8 to 10 minutes
Serve hot with chutney or sambhar or any curry of your choice.

Rava Dosa

Have it for breakfast or lunch...
Ingredients

Roasted Rava/Semolina: 1 Cup
Roasted Rice Flour: 1 Cup
Atta: 1/2 Cup
For Seasoning
Oil: 2 Table Spoon
Urud Dal: 1/4 Tea Spoon
Cumin Seeds: 1/4 Tea Spoon
Onion: 1
Green Chilly: 2 - 3
Ginger: 1 Small Piece
Asafoetida Powder: 1/4 Tea Spoon
Mint Leaves: Few
Coriander Leaves: Few
Curry Leaves: Few
Salt
Water

Cooking Time: 2 - 3 Minutes Per dosa
Method

To a bowl add rava, rice flour, atta and salt
Add water as required and make a thin batter
Chop onion, ginger, green chillies, curry leaves, coriander leaves and mint leaves
To a pan pour oil and add urud dal
Once it starts to change color add cumin seeds,
Add chopped ginger, green chilly and onion
Saute well for some time and switch off the flame and add asafoetida powder, chopped mint, coriander and curry leaves
Add this to the dosa batter
Combine well and keep the batter aside for 10 to 15 minutes
Heat a tawa and pour a laddle full of batter and swirl to all sides
Drizzle some oil or ghee if required
When one side is done flip and cook the other side
Serve hot with chutney or sambhar.  You can eat even with out any curry

Semolina (Rava) Orange Cake

No butter, No egg!!!

Ingredients

Semolina / Rava: 2 Cups
Sugar: 1/2 Cup + 2 tea spoon
Fresh Orange Juice: 2 Cups + 1/4 Cup
Orange Zest: 1 Tea Spoon
Oil: 1/4 Cup
Baking Powder: 1/2 Tea Spoon

Cooking Time: 30 minutes
Method

To a bowl add semolina, 1/2 cup of sugar, 1/2 tea spoon of orange zest and baking powder
Combine well and add 2 cups of orange juice and 1/4 cup of oil and mix
Keep the cake batter aside for 10 to 15 minutes
Preheat the oven at 200C
Transfer the batter to a cake tin and bake for 25 to 30 minutes
In the mean time in a pan add 1/4 cup of orange juice, 2 tea spoon sugar and 1/2 tea spoon orange zest and let it boil for a minute
After 30 minutes check whether the cake is done by inserting a tooth pic in the center
If it comes out clean then the cake is ready
Take the cake out of the oven and then pour the orange juice that we made
Let the cake absorb the orange juice and let it cool completely
Once cooled well cut and serve

Kesari / Sooji ka halwa

From north India to south India, this dish is a favorite dessert.

Ingredients (Makes 12 to 14 pieces)

Semolina / Rava / Sooji (Thin): 1 Cup
Sugar: 1 Cup
Ghee: 4 - 5 Table Spoon
Milk: 3 Cup
Water: 1 Cup
Cashew nuts: For Garnish
Raisins: For Garnish
Cardomom Powder: 1 Pinch
Lemon Yellow Food color: 1 Pinch(Optional)

Cooking time 20 to 25 minutes
Method
Pour ghee to a pan, fry cashew nuts and raisins and keep aside
To the same pan add semolina and fry for about 8 - 10 minutes, no need to make it brown
Boil milk and water and add it to the semolina
Mix the food color in little water or milk
Add sugar and food color and cardomom powder
Stirr well and make sure that there is no lumps
Keep on strring till the whole liquid gets evaporated and semolina gets thick and starts to leave sticking to sides of the pan
Greese the setting tray with little ghee
Pour the mixture to the setting tray and layer it well
Once it becomes little cool, cut using a knife and place the cashew nuts and raisins on top
