Egg less Chocolate Cake

You dont eat eggs, but like cakes...OK then make this Chocolate Cake!!!!
Ingredients

All Purpose Flour/Maida: 1½ cups
Powdered Sugar: 1 Cup
Coco Powder: ½ Cup
Baking Powder: 1 Tea Spoon
Baking Soda: ½ Tea Spoon
Vegetable Oil: ¾ Cup
Thick Yogurt: ½ Cup
Vanilla Essence: ½ Tea Spoon
Milk: ¼ - ½ cup
Chocolate Chips: 1 Tea Spoon

Cooking Time: 30 Minutes
Method

Preheat oven at 170C
Prepare a cake tin by spreading butter on all sides and dust it with some all purpose flour.  Tilt and remove the excess flour and keep aside
Combine all purpose flour, coco powder, baking powder and baking soda
Sieve the mix and keep aside
To a bowl add oil, powdered sugar, yogurt and vanilla essence
Beat  until well combined
To this add sieved all purpose flour mix in batches along with milk and make a smooth ribbon consistency batter
Pour the batter to the prepared cake tin
Sprinkle some chocolate chips on top
Keep in the preheated oven and bake for 25 to 30 minutes
Once down check by inserting a tooth pick in the center of the cake.If it comes out clean the the cake is done. Else bake it for another 4 to 5 more minutes
Take the cake out and let it cool for some time
Remove from cake tin and allow the cake to cool well on a wire rack
Cut and serve with a cup of tea or coffee

Note:
Baking time may vary depending on the oven, so adjust it accordingly

Coca Cola Bottle Cake / Coke Bottle Cake

Yes its a Cake a 3D Coke Bottle Cake....
Ingredients

Chocolate Chips: 300 gms
Coke Bottle: 1 (I have used a 500 ml bottle)
For cake
You can use any cake of your choice
I followed the recipe of simple tea cake.   For recipe of simple tea cake click here
For frosting (You can use any frosting chocolate ganache, butter cream etc)
Whipping cream: 1/4 Cup
Powdered Sugar: 1 Table Spoon
Vanilla Essence: 2 Drops

Preparation Time: 4 Hours 
Cooking Time: For Cake: 30 Minutes
Method

First wash and dry the coke bottle well.
Carefully remove the label from the bottle and keep aside
Draw a square on the bottle as shown in the pic
Now using a craft knife or scissors cut through the marked square
Put the chocolate to a bowl.
Melt the chocolate by double boiling or in microwave
Let the melted chocolate cool well
Pour half of the melted chocolate to the bottle
Now swirl the bottle and spread the chocolate on all sides of the bottle
Tilt and remove the excess chocolate
Keep the chocolate coated bottle in fridge for 30 minutes (Do not freeze)
Now for the next coating take the coke bottle
Reheat the melted chocolate if required and let it cool well
Now pour the chocolate to the bottle.  Keep some melted chocolate for closing the opening of the bottle at the end
As before spread the chocolate well to all sides of the bottle.  Remove the excess chocolate.
Again keep in fridge for 30 minutes
Make the cake and let it cool
Slice the cake and keep it ready
Put powdered sugar and vanilla essence to the whipping cream and whip until soft peaks are formed
Now take the coke bottle from the fridge
Place a layer of the cake in the bottle.  Do not press the cake to the bottom.
Now spread a layer of whipping cream
Repeat with cake and whipping cream layers
The final layer near the opening in the bottle should be cake
Now spread the melted chocolate on the opening of the bottle and spread well
Keep in fridge for a minimum 2 to 3 hours so that the cake and the chocolate is well set before cutting
If you have time i would suggest you to keep it overnight in fridge before cutting
Now comes the tricky part
Take the set cake bottle out of the fridge
Carefully scrape the chocolate from the sealed edge so that the cut edge of the bottle is visible
Now we have to cut off the plastic bottle.
You need to start cutting the bottle from the edge of the opening which we had made before
Carefully insert the craft knife through the edge and start cutting
Take time and care fully cut the bottle without hurting yourself and the cake
In between cutting if you feel the chocolate is melting keep it back in fridge for 5 to 10 minutes and then cut again
I would suggest you to wear gloves while cutting so that your finger prints wont be on the cake
Cut the entire plastic bottle and take your cake out and apply some melted chocolate on the label and attach it back on to the cake
There you go your coke bottle cake is ready

Chocolate Biscuit and Nuts Fudge

Sweet and Simple!!!
Ingredients

Cooking Chocolate: 1 Cup
Condensed milk: 1/2 Tin
Mixed nuts: 1/2 cup
Oreo Biscuits: 8 - 10

Cooking Time: 2 minutes
Method

Prepare a tin lined with parchment paper and keep aside
Chop the nuts and keep aside
Chop the cooking chocolate into small pieces
Add the biscuits to a blender
You can grind it to a fine powder or can chop it to small pieces
Put the chopped chocolate in a microwave safe bowl along with condensed milk and microwave in high power for 2 minutes
Take it out of the microwave and stir well.
Stir until all the chocolate pieces melts and becomes a smooth consistency.  Else keep in microwave for another few more seconds
Now add the powdered biscuits and chopped nuts (reserve a few for garnish)
Stir until everything is combined well
Now pour this mixture to the prepared tin and spread out evenly
Sprinkle the reserved nuts and garnish
Keep in refrigerator for 3 to 4 hours or until it becomes firm
Once done remove from the tin and cut the fudge with a sharp knife into pieces
Serve chilled.
Note:

You can use any chocolate as you wish.  Milk, dark white etc.  You can use chocolate chips or bar
If you don`t have a microwave melt the chocolate by double boiling method
You can use any nuts of your choice.  Almonds, cashew, pista, walnuts etc
You can follow the same recipe adding any biscuit of your choice or without adding biscuit.

Orange Chocolate Chip Cookies

Lets make some yummy cookies....
Ingredients

All Purpose flour/Maida: 2 Cups
Butter: 1/2 Cup (In room temperature)
Powdered Sugar: 1/2 Cup
Baking Powder: 1/2 Tea Spoon
Semi Sweet Chocolate Chips: 1/2 Cup
Freshly Squeezed Orange Juice: 4 Table Spoon
Orange Zest: 1/2 Table Spoon
Salt: 1 pinch

Cooking Time: 10 minutes
Method

Preheat the oven to 150 C
Sift together flour, baking powder and salt and keep aside
In a bowl beat powdered sugar and butter until it becomes fluffy
Add orange juice, orange zest and combine well
Now add the sifted flour mix and fold in gently
Use your hands and knead it to a smooth dough
Add chocolate chips and mix well

Roll out small gooseberry sized balls out of the dough and roll it well and press it slightly with your palms
Sprinkle a few chocolate chips on top. (Optional)
Arrange the cookies on a baking tray and bake for about 8 to 10 minutes at 150 C

Remove from oven and let it cool well
Serve with tea or coffee.

Note:
While keeping the cookies for baking leave some space in between as cookies will expand while baking
Baking time may vary depending on the oven, so adjust it accordingly

Banana Chocolate chip Muffins

Have these muffins for breakfast, dessert or snack!!!!
Ingredients

Ripe Banana: 3 Medium size
All Purpose flour: 1 ½ Cup
Powdered Sugar : ½ Cup
Butter: ½ Cup (In room temperature)
Baking Powder: ½ Tea Spoon
Egg: 1
Vanilla Essence: ½ Tea Spoon
Semi Sweet Chocolate Chips: ½ Cup
Salt: 1 Pinch

Cooking Time: 20 minutes
Method

Mash the banana using a fork
Preheat the oven at 200 C
Beat butter and sugar well
To this add egg and mix
Add mashed banana, flour, baking powder, salt and combine well
Add choco chips and vanilla essence. (Keep a few chocolate chips to sprinkle on top)
Fold in the chocolate chips into the batter
Grease the muffin tray or line it with paper liner. (I have used individual muffin cups)
Fill the cups 3/4 full with batter and sprinkle few chocolate chips on top
Bake for about 20 minutes. After 20 minutes check by inserting a wooden skewer or tooth pick in the center.  If it comes out clean then the muffins are ready.
Take out the muffins from the oven and let the muffins cool completely on a wire rack
Serve as breakfast, or snack or dessert

Note:
Cooking time may vary depending on the oven, so adjust it accordingly
The muffins are not too sweet, if you wish to make it more sweet increase the amount of sugar or chocolate chips
