Chicken Mandhi // ചിക്കൻ മന്തി
An easy Mandhi Recipe that can be made at home...
Cumin seeds : 1 table spoon
Fennel seeds :1 table spoon
Cinnamon stick broken to small pieces: 1 table spoon
Coriander seeds 1 tea spoon
Whole pepper corns 1/2 tea spoon
Dried red kashmiri chillies: 4 - 5
Turmeric powder: 1/2 tea spoon
Dry roast everything other than turmeric powder for 5 minutes in low flame
Switch off the flame and add turmeric powder and combine well
Let it cool down for some time and grind it to a powder

Chicken Majboos // ചിക്കൻ മജ്ബൂസ്
Arabic Masala Powder
Cumin seeds : 1 table spoon
Fennel seeds :1 table spoon

Omani Halwa // ഒമാനി ഹൽവ
A must try recipe....
Sugar: 2 cups (Use 1 Cup Brown sugar and 1 cup white sugar to get dark color for halwa)
Corn Flour: 1 Cup
Water: 2 Cups
Butter/Ghee : 2 Table Spoon
Saffron: 1 Pinch
Cardamom Powder: 1/4 Tea Spoon
Rose Essence: 3 - 4 Drops or Rose Water: 1 Tea Spoon
Cashew nuts / Almonds / Pista Chopped: 3 Table Spoon
Mix corn flour in water and keep aside
to a heavy bottom deep kadai or pot add the sugar and caramelize it (Do not oven brown the caramel)
Reduce the flame and add corn flour mixed water
At this time you might feel the caramelized sugar has crystallized
But thats ok.. Just keep cooking in low flame
Keep stirring..Do not stop in between
After some time the sugar will be completely dissolved
Keep stirring without stopping until the mixture starts to thicken
Once it starts to thicken add saffron, butter, cardamom powder, rose essence and chopped nuts
Once the mixture starts to leave the sides of the pan switch off the flame and transfer it to a bowl
(Makes approx 650gm Halwa)
പഞ്ചസാര : 2 കപ്പ് (1കപ്പ് ബ്രൗണ് ഷുഗറും, 1 കപ്പ് വൈറ്റ് ഷുഗറും ആയി എടുത്താൽ നല്ല ഡാർക്ക് കളർ കിട്ടും)
കോൺ ഫ്ലവർ : 1/4 കപ്പ്
വെള്ളം : 2 കപ്പ്
ബട്ടർ / നെയ്യ് : 2 ടേബിൾ സ്പൂൺ
കുങ്കുമപ്പൂവ് : 1 നുള്ള്
ഏലയ്ക്ക പൊടി : 1/4 ടി സ്പൂൺ
റോസ് എസ്സെൻസ് : 3 - 4 തുള്ളി അല്ലെങ്കിൽ റോസ് വാട്ടർ : 1 ടി സ്പൂൺ
അണ്ടിപ്പരിപ്പ് / ബദാം / പിസ്താ നുറുക്കിയത് : 3 ടേബിൾ സ്പൂൺ
കോൺ ഫ്ലവർ വെള്ളത്തിൽ കലക്കി മാറ്റി വെക്കുക. ചുവടു കട്ടിയുള്ള പാത്രത്തിലേക്ക് പഞ്ചസാര ഇട്ടു കരിയിച്ചെടുക്കുക (കാരമലൈസ് ചെയ്യുക). തീ നന്നായി കുറച്ചു ഇതിലേക്ക് കോൺ ഫ്ലവർ കലക്കിയ വെള്ളം ചേർക്കുക. കാരമലൈസ് ചെയ്ത പഞ്ചസാര കോൺ ഫ്ലവർ വെള്ളം ചേർക്കുമ്പോൾ പെട്ടെന്ന് കട്ടി ആയ പോലെ ആവും. പക്ഷെ കുഴപ്പം ഇല്ല. ഇതു ചെറിയ ചൂടിൽ ഇളക്കി കൊണ്ടേ ഇരിക്കുക.അപ്പൊ നന്നായി അലിഞ്ഞു കിട്ടും.കൈ വിടാതെ ഇളക്കി കൊണ്ടിരിക്കണം.ചെറുതായി കട്ടി ആയി തുടങ്ങുമ്പോൾ ബട്ടർ, കുങ്കുമപ്പൂവ്, ഏലയ്ക്ക പൊടി, റോസ് എസ്സെൻസ് അല്ലെങ്കിൽ റോസ് വാട്ടർ, അണ്ടിപ്പരിപ്പ് അല്ലെങ്കിൽ ബദാം അല്ലെങ്കിൽ പിസ്താ (ഇതിൽ ഏതെങ്കിലും മതി ) ചേർത്ത് പാത്രത്തിൽ നിന്നും വിട്ടു വരുന്ന പരുവം വരെ ഇളക്കുക. ഇനി തീ ഓഫ് ചെയ്ത് പാത്രത്തിലേക്ക് മാറ്റാം

Whole Chicken: 1 (Approx weighing 1 Kg with skin)
Olive Oil: 1 Table Spoon
For Marination
Ginger : 1/2 Inch piece
Garlic : 3 Cloves
Green Chilly: 2
Tomato: 1 Small
Yogurt : 1 Table Spoon
Lemon juice :1 Table Spoon
Pepper : 1/2 tea spoon ( Increase if you want it more spicy )
Olive oil : 1 Table Spoon
Arabic Masala : 2 Tea Spoon

Omani Halwa
Ingredients
Sugar: 1 Cup
Corn Flour: 1/2 Cup
Butter: 1 Table Spoon
Water: 2 Cups
Saffron: 1 Pinch
Cardamom Powder: 1/4 Tea Spoon
Rose Essence: 2 Drop
Cashew nuts/Almonds/Pistachios Chopped:2 Table Spoon
Cooking Time: 30 Minutes
Method
Mix corn flour in water and keep aside
You can use any nuts of your choice. I have used almonds
Keep saffron, cardamom powder, rose essence, butter everything handy
To a heavy bottomed pan add sugar
Caramelize the sugar
Reduce the flame and add the corn flour mixed water
At first you may notice that the caramelized sugar has become hard.
You need not worry it will melt and become a smooth liquid as it gets heated
Do not stop stirring at any time
Once the mixture starts to thicken add chopped nuts, butter, saffron, cardamom powder and rose essence
Let the mixture become thick and starts to leave the sides of the pan
Now switch off the flame
You might feel that the halwa is not at all solidified, but as it gets cooled it will thicken up more
This halwa is not the type of halwa which we cut and serve in pieces. This halwa is eaten with a spoon

Shish Taouk/Tawook
Ingredients
Boneless Chicken: 1 Kg
For marination
Fresh Lime Juice: 5 Table Spoon
Garlic Powder: 2 Table Spoon
Ginger Powder: 1 Tea Spoon
Oregano: 1 Pinch
Paprika: 1 Tea Spoon
White Pepper Powder: 1 Tea Spoon
Yogurt: 4 Table Spoon
Olive Oil: 3 Table Spoon
Apple Cider Vinegar: 1/4 Table Spoon
Tomato Paste: 1/2 Tea Spoon
Salt
Preparation Time: 4 Hours
Cooking Time : 20 minutes
Method
Cut the chicken to small cubes
To a bowl put all the things mentioned under for marination and combine well
To this add chicken and marinate well and keep in fridge for a minimum 4 hours
Heat the grill and drizzle some olive oil and place the chicken on the grill. You can skew it on metal or wooden skewers and place on the grill
Cook until done. Do not over cook as the chicken will become dry.
Serve hot with pita bread, tortilla or roti along with garlic sauce and grilled vegetables

Shawaya Chicken / Whole Grilled Chicken / Rotisserie Chicken
Ingredients
Whole Chicken(with skin): 1 (Approx 1 kg)
Butter: 1 Table Spoon
For Marination
Onion: 1
Tomato: 1
Green Chilly: 1
Olive Oil: 2 Table Spoon
Chat Masala: 1/2 Tea Spoon
Pepper Powder: 1 Tea Spoon
Kashmiri Chilly Powder: 1/2 Tea Spoon
Lime Juice: 3 Table Spoon
Yogurt: 3 Table Spoon
Chopped Ginger: 2 Table Spoon
Chopped Garlic: 2 Table Spoon
Salt
Preparation Time: Over night
Cooking Time: 1 Hour
Method
Clean and wash the chicken well
Using a fork or knife prick the chicken on all sides
Grind all the ingredients mentioned under for marination and make a fine paste
Add the paste to the chicken and marinate well. Cover and keep in fridge overnight. (Do not freeze)
Take the chicken from fridge and keep it out for 5 minutes
Preheat the oven to 180 degree
Use tooth pick or wooden skewers and fix the legs and wings together(Optional)
Skew the chicken on to the rotisserie, tighten the clamps and grill it for 30 minutes
Then carefully take the chicken out of the oven and spread little butter or olive oil and keep it back in the oven and grill for another 30 minutes
Serve hot with kuboos or pita bread along with hummus or garlic sauce and salad

Baking time may vary depending on the oven.
After marinating the chicken put it in a zip lock pouch and keep in fridge.
As i was running short of yogurt I used laban instead of yogurt, that`s why my marination looks little watery.

Hummus / Houmous
Ingredients
White Chickpeas: 1 Cup
Tahineh/Tahini: 1/4 Cup
Olive Oil: 1/4 Cup
Garlic: 2 Cloves
Lemon juice: 2 Table Spoon
Salt
Method
Wash and soak the chickpea over night in enough water
Pressure cook the chickpea until very soft.
Once cooked drain the chickpea and let it cool
Keep some of the water in which the chickpea is cooked
Add the cooked chickpea, tahini, olive oil, garlic and salt to a food processor and grind it to a fine smooth paste
Add the reserved water as required while grinding
Transfer it to a serving bowl and drizzle some olive oil on top
Serve with pita bread, grilled chicken, fish etc.
Note:
To make Tahineh/Tahini (Sesame Seeds Paste) at home
Take 1 cup of white sesame seeds and dry roast it for some time. Allow it to cool and then put this to a food processor. Take 1/4 Cup of olive oil. Add 2 to 3 tables spoons of oil at first and grind the sesame seeds and make it a paste. gradually keep adding the oil so that it achieves a liquid consistency. You can pour it to a air tight container and store in the refrigerator

Chicken Shawarma
Ingredients
Boneless Chicken: 500 gm
Pita Bread/Kubboos/Shawarma Bread: 8
For Salad
Chopped Cucumber: 2 small
Chopped Lettuce: 1/2
Sliced Carrots: 1 big
Chopped Tomato: 1 big
Pickled Carrots/Cucumber: Optional
For Marination
Thick Yogurt: 2 Table Spoon
Garlic paste: 1 Table Spoon
Vinegar: 1 Tea Spoon
Pepper Powder: 1/2 Tea Spoon
Mixed Spice Powder: 1/2 Tea Spoon
Lime juice: 1/2 Tea Spoon
Cardamon Powder: 1/4 Tea Spoon
Olive Oil: 2 Table Spoon
Salt
For Sauce
Tahineh/Tahini (Sesame Seeds Paste): 2 Table Spoon
Thick Yogurt: 4 Table Spoon
Garlic Paste: 1 Tea Spoon
Lime Juice: 1 Table Spoon
Salt
Preparation Time: Over Night
Cooking Time: 45 minutes
Method
Put the cleaned chicken pieces to a bowl and add all the ingredients mentioned under for marination and combine well
Cover and keep in fridge over night or minimum 8 to 9 hours (Do not freeze)
After the said time take the chicken from fridge and keep it out for 5 minutes
Preheat the oven to 180 C
Place the chicken pieces on an oven safe tray and bake for 30 to 35 minutes.
Flip sides regularly and brush little olive oil each time
Once the chicken is done take it out of the oven.
Pour a table spoon of olive oil to a pan and fry the chicken for a minute or two so that the outer part of the chicken will become light brown in color. (If you don't have an oven you can cook the chicken in a pan by drizzling oil as required in medium heat)
In the mean time combine all the ingredients mentioned under for sauce and keep it aside
In a bowl mix chopped cucumber, lettuce, carrots and tomato and make the salad
Once the chicken cools a bit chop it to bite size pieces
Now lets combine everything and make shawarma roll
Take a pita bread and spread some sauce on it.
Take a portion of the chicken and salad mix and keep it on the pita bread
If using pickled cucumber or carrots keep 1 or 2 pieces
Now roll it carefully and cover with aluminium foil or butter paper
Serve right away
Note:
Baking time may vary depending on the oven so keep a close eye
You can add any vegetable of your choice to make the salad
