Kinnathappam / കിണ്ണത്തപ്പം

South Kerala Special ...


Pachari / Basmathi Rice : 1 Cup
Coconut Milk : 2.5 Cups
Sugar : Half Cup
Cardamom Pods:  6 - 8
Egg : 1
Cumin : 2 Pinch Optional

Wash and soak the rice for 4 to 5 hours
Strain the water and add the soaked rice to a mixer
To this add half cup coconut milk, sugar, egg and cardamom pods
Grind to to a fine paste and pass the mixture through a seive
Do not add too much of coconut milk as you need to grind the batter to a fine paste.
Now add the rest of the coconut milk and combine well
Pour water to a steamer and let it boil well
Drizzle some oil to a steel plate and pour the batter . Sprinkle the cumin seeds and steam well for 15 to 20 minutes
Take a tooth pic and insert in the center
If it comes out clean then it's done. Else steam for some more time. 
Take it out and let it cool well and then remove from plate and cut and serve

പച്ചരി / ബസ്മതി അരി : 1 കപ്പ്
തേങ്ങാപ്പാൽ : 2.5 കപ്പ്
പഞ്ചസാര : 1/2 കപ്പ്
ഏലയ്ക്ക : 6 - 8 എണ്ണം
മുട്ട : 1
ജീരകം : 2 നുള്ള് (Optional)

അരി കഴുകി 4 - 5 മണിക്കൂർ കുതിർത്തു വെക്കുക.
ശേഷം ഊറ്റി എടുത്തു മിക്സിയിലേക്ക്‌ ഇടുക. 
കൂടെ അര കപ്പ് തേങ്ങാപ്പാൽ, പഞ്ചസാര, മുട്ട, ഏലയ്ക്ക എന്നിവ ചേർക്കുക
ഇത് ഒട്ടും തരി ഇല്ലാതെ അരച്ചെടുക്കുക.
തേങ്ങാപ്പാൽ ഒരുമിച്ചു ചേർക്കരുത്.അപ്പോൾ അരഞ്ഞു കിട്ടില്ല.
ഇനി ഇത് ഇഴ അടുപ്പം ഉള്ള അരിപ്പയിലൂടെ അരിച്ചെടുക്കുക.
ഇനി ബാക്കി തേങ്ങാപാലും കൂടെ ചേർത്തിളക്കുക.
സ്റ്റീമർ വെള്ളം ഒഴിച്ചു ചൂടാക്കാൻ വെക്കുക
സ്റ്റീൽ പ്ലേറ്റിൽ ഓയിൽ തടവി മാവ് ഒഴിച്ച്  ജീരകം വിതറി 15 - 20 മിനിറ്റ് ആവിയിൽ വേവിക്കുക
ഒരു ടൂത് പിക് കുത്തി നോക്കുക. മാവ് ഒന്നും ഒട്ടിപിടിക്കുന്നില്ലെങ്കിൽ കുക്ക് ആയി..അല്ലെങ്കിൽ കുറച്ചു സമയം കൂടി വേവിക്കുക
ശേഷം പുറത്തെടുത്തു തണുക്കാൻ വെക്കുക.
നന്നായി തണുത്തു കഴിഞ്ഞു മാത്രം ഇളക്കി എടുത്തു മുറിച്ചെടുക്കാം.

Boli / Holige / Obattu / Puran Poli // ബോളി/ ഹോളിഗെ / ഒബട്ടു / പൂരൻ പോളി.

Boli in Kerala, Holige / Obattu in Karnataka, Pooran Poli in Maharashtra .. This sweet is known by many names and tastes good too . Let's see the recipe ..

For Dough
Maida / All Purpose Flour: 2 Cups
Turmeric powder: 1/4 teaspoon
Salt: A pinch
Ghee / Oil: 3 Table Spoon

For Filling
Chana Dal: 1 Cup
Jaggery: 1 Cup
Cardamom powder: 1/4 Tea Spoon
Salt: A pinch

To flour add salt, turmeric and 1 tbsp oil and mix well. Add enough water and knead the chapati dough a little more. Apply 2 tablespoons of oil on top and leave for 3 hours.

Wash the chana dal and  soak it  in water for an hour, 
Add enough water and cook the dal . Once done grind the dal in a mixie.
Melt the jaggery in  little water and strain it.
Add powdered chana dal and mix well
Cook until it is dry, add cardamom powder and salt and turn off the heat
When the heat cools, make a small ball.
Take a small ball out of the kneaded dough and spread it lightly. Now place the chana dal ball in the center and close the dough ball
The dough ball should be closed well so that the filling inside does not come out. Cut off the excess dough.
Now it needs to be rolled out very thin 
Here i used 2 sheets of butter paper.  i rubbed a little oil on the butter paper and spread it by hand.
You can dust with a little flour and use a rolling pin to spread the dough
Put it in a hot tawa  and cook both sides . You can drizzle a little ghee on it ..
You can make 12 boli with this quantity.
മൈദ : 2 കപ്പ്
മഞ്ഞൾ പൊടി: 1/4 ടീ സ്പൂണ്
ഉപ്പ് : ഒരു നുള്ള്
നെയ്യ്/ഓയിൽ: 3 ടേബിൾ സ്പൂണ്

കടല പരിപ്പ് : 1 കപ്പ്
ശർക്കര : 1 കപ്പ്
ഏലക്കാ പൊടി : 1/4 ടീ സ്പൂണ്
ഉപ്പ് : ഒരു നുള്ള്

മൈദ,  ഉപ്പ്, മഞ്ഞൾ, 1 ടേബിൾ സ്പൂണ് ഓയിൽ എന്നിവ ചേർത്ത് നന്നായി മിക്സ് ചെയ്യുക. ഇതിലേക്ക് ആവശ്യത്തിന് വെള്ളം ചേർത്ത് ചപ്പാത്തി മാവിനേക്കൾ അല്പം കൂടി അയവിൽ മാവ് റെഡി ആക്കുക. ഇതിലേക്ക് 2 ടേബിൾ സ്പൂണ് ഓയിൽ മുകളിൽ തേച്ച് 3 മണിക്കൂർ മാറ്റി വെക്കുക.  

കടലപ്പരിപ്പ് കഴുകി ഒരു  മണിക്കൂർ വെള്ളത്തിൽ ഇട്ടു കുതിർത്തു വെക്കുക ശേഷം  വെള്ളം ഒഴിച്ച് കുക്കറിൽ ഇട്ടു വേവിച്ചെടുക്കുക ..ഈ കടലപ്പരിപ്പ് മിക്സിയിൽ ഇട്ടു  പൊടിച്ചെടുക്കുക
ശർക്കര അല്പം വെള്ളം ചേർത്ത് ഉരുക്കി അരിച്ചെടുക്കുക.. 
ഇതിലേക്ക് പൊടിച്ചെടുത്ത കടല പരിപ്പ് ചേർത്ത് വഴറ്റുക
വെള്ളം വറ്റി ഡ്രൈ ആകുമ്പോൾ ഏലയ്ക്ക പൊടി,ഉപ്പ് എന്നിവ ചേർത്തിളക്കി തീ ഓഫ് ആക്കുക
ചൂട് ഒന്ന് തണയുമ്പോൾ ചെറിയ ബോൾ ആക്കുക. 
കുഴച്ചു വെച്ച മൈദയിൽ നിന്നും   ചെറിയ ബോൾ ആക്കി എടുക്കുക.ചെറുതായി ഒന്ന് പരത്തുക.  ഇനി ഒരു കടലപ്പരിപ്പ് ബോൾ  മൈദ മാവിനുള്ളിൽ വച്ച് ഉരുട്ടി എടുക്കുക. ഉള്ളിൽ നിറച്ചത് പുറത്തേക്ക് വരാത്ത രീതിയിൽ നന്നായി ഉരുട്ടി എടുക്കണം. കൂടുതൽ ആയി വരുന്ന മാവി മുറിച്ചു മാറ്റണം. 
ഇനി ഇത് കനം കുറച്ച് പരത്തി എടുക്കണം
ഞാൻ ബട്ടർ പേപ്പറിൽ അല്പം എണ്ണ തടവി കൈ വെച്ച് ആണ് പരത്തി എടുത്തത്.. അല്ലെങ്കിൽ അല്പം മാവ് തൂവി ചപ്പാത്തി കൊല് ഉപയോഗിച്ച് പരത്തി എടുക്കാം.
ചൂടായ തവയിൽ ഇട്ട് ചുട്ടെടുക്കുക.. അല്പം നെയ്യ് തടവി എടുക്കാം..
ഈ അളവിൽ 12 ബോളി ഉണ്ടാക്കാം..

Kappa Biriyani // കപ്പ ബിരിയാണി // ഇറച്ചിയും കപ്പയും ..

I made it with Chicken..Usually its made with Beef or Mutton....


Tapioca: One kg 
Chicken: 1 kg
Onion: 1
Ginger: One Small Piece Crushed 
Garlic: 5 Cloves Crushed 
Green Chillies: 5 Crushed
Coriander Powder: 1 Tablespoon 
Chili Powder: 1 Table Spoon 
Turmeric Powder: 1/4 Tablespoon 
Pepper Powder: Half a Tablespoon 
Garam Masala: 1/4 Tablespoon 
Salt: As Needed
Curry leaves
Coconut oil
Mustard
Dry Red Chilly

Pour enough water to boil the kappa and when it boils well, drain the water and cook again with enough water and some salt.
Heat a pan, pour oil and fry onion. Add ginger, garlic and green chillies. Once it is well cooked, add masala powder and saute well
Then add chicken, cover and cook over low heat. 
Add salt and curry leaves to taste. When the chicken is cooked, add the cooked and mashed kappa. 
Then mix well and cook on low heat for 5 minutes
Season with mustard, curry leaves and dried red chilli.

ഇഞ്ചി :ചെറിയ കഷ്ണം ചതച്ചത്
വെളുത്തുള്ളി :5 അല്ലി ചതച്ചത് 
പച്ചമുളക് :5 എണ്ണം ചതച്ചത്
മല്ലിപൊടി :1 ടേബിൾസ്പൂൺ 
മുളകുപൊടി : 1  ടേബിൾസ്പൂൺ 
മഞ്ഞൾപൊടി :കാൽ ടേബിൾസ്പൂൺ 
കുരുമുളക് പൊടി :അര ടേബിൾസ്പൂൺ 
ഗരംമസാല :കാൽ ടേബിൾസ്പൂൺ 
ഉപ്പ്‌ :ആവശ്യത്തിന് 
കറിവേപ്പില
വെളിച്ചെണ്ണ
കടുക്
വറ്റൽ മുളക്‌

കപ്പയിൽ പാകത്തിന് വെള്ളം ഒഴിച്ച് ഒന്ന് നന്നായി തിളക്കുമ്പോൾ വെള്ളം ഊറ്റി കളഞ്ഞ് വീണ്ടും ആവശ്യത്തിന് വെള്ളവും കുറച്ചു ഉപ്പും ചേർത്ത് വേവിക്കുക
പാൻ ചൂടാക്കി എണ്ണ ഒഴിച്ച് സവാള വഴറ്റുക. ഇതിലേക്ക് ഇഞ്ചി, വെളുത്തുള്ളി, പച്ചമുളക് ചേർക്കുക. നന്നായി വഴന്നു കഴിഞ്ഞു മസാല പൊടികൾ ചേർത്ത് നന്നായി മൂപ്പിക്കുക
ശേഷം ചിക്കൻ ചേർത്ത് ചെറിയ തീയിൽ അടച്ചു വെച്ച് വേവിക്കുക. 
പാകത്തിന് ഉപ്പും, കറിവേപ്പിലയും ചേർക്കുക. ചിക്കൻ പാകം ആയാൽ വെന്ത കപ്പ ഒന്ന് ഉടച്ചു ചേർക്കുക. 
ശേഷം നന്നായി ഇളക്കി യോജിപ്പിക്കുക.. ചെറിയ തീയിൽ ഒരു 5 മിനിറ്റ് വേവിച്ചെടുക്കുക
കടുകും കറിവേപ്പിലയും വറ്റൽ മുളകും കൂടെ  താളിച്ചു ചേർക്കുക

Kuttanadan Meen Curry / Kuttanadan Fish Curry

Spicy spicy fish curry.....
Ingredients

Fish: 750 gms
Shallots/Small Onion: 10 - 12
Garlic: 3 - 4
Green Chilly: 2 - 3
Ginger: 1 Inch Piece
Kudampuli: 3 - 4 pieces
Red Chilly Powder: 2 Table Spoon
Kashmiri Chilly Powder: 1 Table Spoon
Coriander Powder: 1 Tea Spoon
Turmeric Powder: 1/2 Tea Spoon
Coconut Oil: 3 Table Spoon
Mustard Seeds: 1/4 Tea Spoon
Fenugreek Seeds/Uluva: 1/4 Tea Spoon
Hot Water: 1 - 2 Cups
Curry leaves: Few
Salt

Cooking Time: 30 - 40 minutes
Method

Clean and wash the fish well and cut it into small pieces
You can use any fish of your choice. I have used the fish kaalanchi here.
Soak the kudampuli in water and keep aside
Chop shallots, garlic and ginger.  Slit the green chilly
To a kadai or clay pot add coconut oil
Once the oil is hot add mustard seeds and fenugreek seeds
Once the mustard seeds finishes crackling add chopped shallots, garlic, ginger and slit green chilly
Saute in medium flame for a good 5 to 6 minutes
Take the spice powders
Mix it well and add little water and make a paste of it
Reduce the flame and add the masala paste
Saute in the lowest flame possible until oil starts to leave
Now add required hot water(as per the gravy required) and let it boil well
Add soaked kudampuli, fish pieces, curry leaves and salt
Cover and cook in medium flame for 10 to 15 minutes
Switch off the flame and keep it closed for another 10 more  minutes and then serve hot with rice

Avalose Podi / Roasted Rice powder with coconut

Reminds me of my childhood!!!
Ingredients

Raw rice: 1 Cup
Grated Coconut: 3/4 Cup
Cumin Seeds: 1/4 Tea Spoon
Salt

Cooking Time: 30 minutes
Method

Wash and soak rice for 3 hours and then drain it and let it dry for sometime
Grind the rice to a smooth powder.
To this add grated coconut, cumin and some salt
Combine this well and keep aside for 30 to 40 minutes
Dry roast this mixture on medium flame for about 25 to 30 minutes stirring continuously until the mixture turns light brown in color
Switch off the flame and let it cool well
Store in airtight containers
Add little sugar and have it with a cup of tea or if you wish to you can add some chopped bananas too

Chicken Mappas / Chicken in rich coconut milk gravy

A typical Kerala Spicy Chicken curry with coconut milk........
Ingredients

Chicken: ½ Kg
Whole Pepper Corns: 1½ Tea Spoon
Fennel seeds: 1½ Tea Spoon
Cardamom: 2
Clove: 2
Bay Leaf: 1
Cinnamon Stick: 1 inch Piece
Chopped Ginger: 1 Table Spoon
Chopped Garlic: 1 Table Spoon
Onion: 1 big
Tomato: 1 Big
Green Chilly: 2 - 3
Coconut Oil: 3 Table Spoon
Coriander Powder: 1 Table Spoon
Turmeric Powder: ½ Tea Spoon
Garam Masala Powder: ½ Tea Spoon
Chicken Masala Powder: ½ Tea Spoon
Thin Coconut Milk: 1 Cup
Thick Coconut Milk: ½ Cup
Salt
Water
Curry Leaves
For Seasoning
Coconut Oil: 1 Table Spoon
Shallot: 2 - 3
Curry Leaves

Cooking Time: 30 minutes
Method

Wash and cut the chicken into small pieces and marinate it with 1/4 tea spoon turmeric powder and salt
To a pan pour coconut oil and add pepper corns, fennel seeds, cardamom, clove, bay leaf and cinnamon stick
Saute for 2 minutes in low flame and then add chopped ginger, garlic and green chilly
Saute for a minute and then add sliced onion.
Saute till the onion becomes translucent
Reduce the flame and add turmeric powder, coriander powder, garam masala powder and chicken masala
Saute for 6 to 8 minutes on low flame till the raw smell of the masala is gone
To this add the marinated chicken and stir well
Saute for 5 to 6 minutes so that the masala gets well coated on the chicken
Add thin coconut milk, tomato and curry leaves and let it boil
Once it boils well reduce the flame and cover and cook till the chicken is done (around 20 minutes)
In between open the lid and stir
Once the chicken is cooked and the gravy has achieved the required consistency add the thick coconut milk and give a good stir
After a minute switch off the flame
For seasoning pour coconut oil to a pan and add the mustard seeds.  Once it splutters add sliced shallots and let it change color
Pour this to the curry and mix well
Serve hot with appam, idiappam, vattayappam, puttu, ghee rice etc.

Kaipola / Banana Cake

Another popular malabar iftaar dish!!!
Ingredients

Banana/Nendrapazham (Ripe): 3
Eggs: 4
Sugar: 3 Table Spoon
Cardamom Powder: 1/2 Tea Spoon
Ghee:2 Tea Spoon
Cashew nuts/Raisins: For Garnish

Cooking Time: 20 minutes
Method

Peel the skin of the banana and chop it to small pieces
To a bowl add egg, sugar and cardamom powder
Beat using a fork or egg beater till the sugar is completely dissolved
To a pan pour ghee and fry the cashew nuts and raisins and keep aside
To the same pan add chopped banana and fry until slightly brown in color
Add the fried banana to the egg mixture and combine well
To a pan pour little ghee and grease the pan
Pour the mixture to the pan
Cover and cook on very low flame for about 15 to 20 minutes.
To check if its completely cooked or not insert a tooth pick in the center and check.  If it comes out clean its ready
Switch off the flame and let it cool
Once cooled take it out of the pan and cut and serve

Note:
You can also bake it in a preheated oven at 180 C for 15 to 20 minutes
Or you can pour the mixture to a dish and place it in a steamer and steam cook.

Konju / Chemmeen Theeyal (Prawns in tangy fried coconut gravy)

Another favorite delicacy in Kerala Cuisine!!!
Ingredients

Prawns: 250 gms
Shallots/Cheriya ulli: 10 - 12 nos
Tamarind: 1 Gooseberry size
Turmeric powder: 1/4 Tea Spoon
Coconut oil : 1 - 2 Table Spoon
Salt
Water
Curry Leaves
For Roasting
Coconut Oil: 1 - 2 Table Spoon
Grated Coconut: 1/2 Cup
Dried red chilly: 4 - 5
Coriander Seeds:1 Table Spoon
Fennel seeds/Perumjeerakam: 1/4 Tea Spoon
Black pepper corns: 6 - 8
Asafoetida: A Small Piece or 2 pinch of  asafoetida powder
Fenugreek seeds: 1/4 Tea Spoon
For Seasoning
Coconut oil: 1- 2 Table Spoon
Mustard Seeds: 1/2 Tea Spoon
Coconut Pieces: 1/2 Table Spoon(Optional)
Dried Red Chilly: 2 - 3

Cooking Time: 20 minutes
Method

Clean and wash the prawns
Chop the shallots and keep aside. No need for fine chopping
Soak tamarind in water and keep side
To a pan pour 2 table spoon coconut oil and add dried red chilly, coriander seeds, fennel seeds, black pepper corns, asafoetida and fenugreek seeds and saute for 2 minutes.
To this add grated coconut and fry till the coconut becomes light brown in color
Make sure you roast everything in medium heat.
Let this cool a bit and grind it to a fine paste adding little water
To a pan add 1 table spoon of coconut oil and saute the shallots for 2 minutes
Squeeze the tamarind well and add the water to the shallots
To this add cleaned prawns, turmeric powder and salt and allow it to cook well (4 to 5 minutes)
Add the coconut paste with enough water and let it boil
Add curry leaves and reduce the flame and allow it to boil for another 4 or 5 minutes and then switch off the flame
Pour coconut oil to a pan and add mustard seeds and once it finishes spluttering add coconut pieces
Saute till the coconut pieces turn light brown in color and then dried red chilly and saute for few more seconds
Now pour this on top of the theeyal
Enjoy with a cup of steamed rice, or appam, chapathi, pathiri etc

Note
Adjust the spice levels as per your taste
Add water as per the thickness required for the gravy
You can add a few curry leaves while frying coconut also
Can substitute coriander seeds and dried red chilly with coriander powder and red chilly powder. But add it only after the coconut is fried well.

Ayala Pollichathu / Mackerel Wrapped in Banana Leaf

For today`s Lunch!!!!!
Ingredients

Ayala / Mackerel: 2
Shallots: 1/2 Cup
Chopped Garlic: 2 Table Spoon
Chopped Ginger: 1 Table Spoon
Chopped Green Chilly: 3 - 4
Tomato: 1
Red Chilly Powder: 1/2 Tea Spoon
Turmeric Powder: 1/4 Tea Spoon
Coriander Powder: 1/2 Tea Spoon
Pepper Powder: 1/2 Tea Spoon
Fennel Seeds:1/2 Tea Spoon (Optional)
Coconut milk: 1/2 Cup
Coconut oil : 3 Table Spoon
Salt
Water
Curry Leaves

Requirements

Banana Leaf / Aluminium foil
Steamer

Cooking Time: 30 minutes
Method

Clean the fish and make gashes on it.
Marinate the fish with turmeric powder, pepper powder and salt
Keep aside for 10 to 15 minutes
Pour coconut oil to a pan and fry the fish for about 5 minutes by flipping sides as necessary.
Remove fish on to a plate and to the same pan add chopped ginger and garlic and saute for about 5 minutes
Then add chopped shallots and saute till shallots cooks
Slightly crush the fennel seeds and add it
Reduce the flame and add chilly powder, coriander powder and salt
Saute till the raw smell of the spices is gone.
Now add chopped tomato and  cook well
Add curry leaves and pour coconut milk and keep on flame until the mixture is completely dry and oil starts to leave
Wrapping
Put some of this mixture on the banana leaf/ aluminium foil
Place the fish on top of it
Now put some more of the masala mix on top, spread well and fold the banana leaf / aluminium foil
Fold the banana leaf/aluminium foil to wrap the fish completely else the masala might come out.  If using banana leaf tie it with a twine.
Steam this for about 10 to 15 minutes..
Serve hot with rice..

Note:

Do not over fry the fish.
This recipe is mostly done with Karimeen / Pearl Spot fish.  But you can also try it with Tilapia, King fish, Salmon etc..
After wrapping the fish in banana leaf in some recipes i have seen they fry it in oil or toast it on a pan.
You can try those variations too
Instead of tomato you can add lime juice
As you all know wrapping in banana leaf gives the dish a unique flavor but as in some places where banana leaves are not easily available use aluminium foil.  I have always used aluminium foil to make this dish.
If using banana leaf wash the banana leaf well and wipe out water from it.  Place the banana leaf on low flame for a few seconds on each side so that it looses stiffness and becomes flexible so that while wrapping it wont tear. Be careful that you don't burn the leaf.
