Coin Biscuit / Egg Biscuit // കോയിൻ ബിസ്ക്കറ്റ് / മുട്ട ബിസ്ക്കറ്റ്

Kids Special Recipe..

Egg : 1
Maida : 1/2 Cup
Sugar : 1/4 Cup
Vanila Essence : 1/2 Tea Spoon
Salt : 1 Pinch
Baking Powder : 1 Pinch
Yellow Food Color : 1 Pinch (Optional)

Beat egg and sugar well
Then add all the other ingredients and combine well
Pour this to a piping bag
Cut the piping bag and pipe small coins on to a baking tray
Slightly pat the baking tray
Preheat the oven at 180C for 10 minutes
Bake at 170 C for 15 to 20 minutes
Take it out of the oven and let it cool well
Once cooled remove from tray
Store in airtight container
**Makes approximately 150 grams of coin bicuit. 

മുട്ട: 1
മൈദ: 1/2 കപ്പ്
പഞ്ചസാര: 1/4 കപ്പ്
വാനില എസെൻസ്: 1/2 ടീ സ്പൂൺ
ഉപ്പ്: 1 നുള്ള്
ബേക്കിംഗ് പൗഡർ: 1 നുള്ള്
മഞ്ഞ ഫുഡ് നിറം: 1 നുള്ള് (ഓപ്ഷണൽ)

മുട്ടയും പഞ്ചസാരയും നന്നായി ബീറ്റ് ചെയ്യുക. 
അതിനുശേഷം മറ്റെല്ലാ ചേരുവകളും ചേർത്ത് നന്നായി യോജിപ്പിക്കുക
ഇത് ഒരു പൈപ്പിംഗ് ബാഗിലേക്ക് ഒഴിക്കുക
പൈപ്പിംഗ് ബാഗ് മുറിച്ച് ചെറിയ നാണയങ്ങൾ പോലെ ഒരു ബേക്കിംഗ് ട്രേയിലേക്ക് പൈപ്പ് ചെയ്യുക
ബേക്കിംഗ് ട്രേ ചെറുതായി ഒന്ന് തട്ടി കൊടുക്കുക. 
ഓവൻ 180 സിയിൽ 10 മിനിറ്റ് പ്രീ ഹീറ്റ് ചെയ്യുക. 
170 സിയിൽ 15 മുതൽ 20 മിനിറ്റ് വരെ ബേക്ക് ചെയ്യുക
ഓവന്നിൽ നിന്ന് പുറത്തെടുത്ത് നന്നായി തണുക്കാൻ വെക്കുക.
തണുത്തു കഴിഞ്ഞാൽ ട്രേയിൽ നിന്ന് മാറ്റുക.

Homemade Bourbons / Chocolate Cream Biscuits

Loved making this biscuits...Trust me you will never buy Bourbons once you make this at home..

Ingredients

For Biscuit
All Purpose Flour / Maida: 3/4 cup
Butter: 4 Table Spoon
Powdered Sugar: 1/4 Cup
Coco Powder: 2 Table Spoon
Milk: 2 Table Spoon

For Cream Filling
Butter: 2 Table Spoon
Powdered Sugar: 1/2 Cup
Coco Powder: 2 Tea Spoon
Milk: 1/2 Tea Spoon

Baking Time: 12 - 15 Minutes per batch
Method

To a bowl add butter and sugar and cream it well
Combine coco powder and all purpose flour
To the butter mix add all purpose flour mix and milk in batches and make a dough
You don`t have to knead the dough. Just have to combine everything well.
Cover with a cling film or aluminium foil and refrigerate it for 20 minutes
Preheat the oven at 180 C for 10 minutes
Roll the dough to a slight thick sheet
You can place the dough between 2 sheets of butter/wax/parchment paper for easy rolling
Using a cookie cutter or knife cut rectangular shaped cookies out of it.
Using a fork prick on the rectangle shaped cookie dough
This is done to give it a bourbon biscuit effect
Bake in a preheated oven for 12 to 15 minutes
Once done take it out of the oven and let it cool well
For the cream filling take all the ingredients mentioned under cream filling
Combine well and your filling is ready
Once the biscuits are cooled well apply some cream filling on one biscuit and keep another biscuit on top like a sandwich (Do not do this when the biscuits are hot )
That`s it your bourbons are ready.
Note:
From this quantity of ingredients i got around 28 biscuits.

Coconut Cookies

These cookies are so tasty that you just cant stop munching on....
Ingredients

All Purpose flour/Maida: 3/4 Cup
Dessicated Coconut: 1 Cup
Powdered Sugar: 3/4 Cup
Unsalted Butter: 3/4 Cup
Vanilla Essence 1Tea Spoon
Salt: 1 Pinch
Almonds/Cashews/Raisins : For Garnish

Cooking Time: 10 Minutes 
Method

Preheat the oven to 150 C
To a bowl add butter and powdered sugar
Beat butter and sugar until smooth
To this add all purpose flour, dessicated coconut, vanilla essence and salt
Use your hands and knead it to a smooth dough
Roll out small gooseberry sized balls out of the dough and roll it well
Arrange the cookies on a baking tray and place an almond or cahsew or raisin on each cookie ball and bake for about 8 to 10 minutes at 150 C
Remove from oven and let it cool well
Serve with tea or coffee.
Note:
While keeping the cookies for baking leave some space in between as cookies will expand while baking
Baking time my vary depending on the oven so adjust it accordingly

Nan Khatai / Short Bread Biscuits

The famous tea time cookies......
Ingredients

All Purpose Flour / Maida: 1 Cup
Butter(In room Temperature): 1/2 Cup
Powdered Sugar: 1/2 Cup
Corn Flour: 1/2 Table Spoon
Salt: 1 Pinch
Cardamom Powder: 1/4 Tea Spoon
Nutmeg Powder: 1/4 Tea Spoon
Baking Powder: 1/4 Tea Spoon
Milk: 1 Table Spoon (Optional)
Almonds/Pista/Cashew: Few

Baking Time :20 Minutes
Method

Sieve all purpose flour, corn flour, baking powder and salt
To this add cardamom powder and nutmeg powder and combine well
To a bowl add butter and powdered sugar
Using a spatula mix butter and sugar until light
To this add flour mixture
Slowly using your hands combine well and make a dough
If required add milk
Cover with a cling film and let the dough rest for 30 minutes
Preheat the oven at 150 degree
Roll out small lemon sized balls out of the dough. (I made 16 cookies).
You should roll the balls well without any cracks
Place a parchment paper or aluminium foil on the tray and place the balls
Leave some space between each balls
Place an almond or pistachio or cashew nut on each cookie and slightly press the nut on to the dough ball
Place the tray in the oven and bake for 20 minutes
Keep watching your cookie.  It should not change color
Once done take the cookie tray out of the oven and let it cool for some time
Transfer the cookie on to a cooling tray and let the cookie cool well
Store in an airtight container
Serve with a cup of tea or coffee

Cake N Biscuit Sandwich Pudding

Your kids will love this for sure!!!
Ingredients

Vanilla Sponge Cake: 500 gms
Whipping Cream: 2 Cups
Powdered Sugar: 1 Cup
Oreo Biscuits: 25 numbers
Chocolate Chips: Few
Caramel Sauce: 2 Table Spoon
Vanilla Essence: 1/2 Tea Spoon
Grated Chocolate: For Garnish

Cooking Time: Nil
Method

Slice the cake to medium thick pieces. If you wish to you can remove the crust.
Pour whipping cream to a bowl along with the powdered sugar and vanilla essence and whip until soft peaks are formed
Take a pudding tray and spread little whipped cream on the bottom
Now keep a layer of the cake
Spread a layer of whipped cream on the cake layer
Make sure the cake pieces are well covered
Now sprinkle some chocolate chips and drizzle some caramel sauce
Place the next layer of oreo biscuits.  You might have to break a few to spread all over
Now spread whipped cream covering the entire biscuit layer
Sprinkle some chocolate chips and drizzle some caramel sauce
Next layer would be the cake.
Now  spread the remaining whipped cream all over the pudding
Sprinkle some chocolate chips and drizzle some caramel syrup and sprinkle some grated chocolate or you can crush a few oreo biscuits and sprinkle that
Cover and keep in fridge for at least 3 to 4 hours
Cut and serve cold
Note:
You can use any biscuits of your choice
You can use bread instead of cake
You can use chocolate syrup instead of caramel syrup.
