Egg Dosa / Mutta Dosa / മുട്ട ദോശ

Easy Tasty Egg Dosa Recipe...

Dosa Batter :1 Cup
Egg : 3
Onion : 1 Finely Chopped
Tomato : 1 Finely Chopped
Green Chilly : 2 Finely Chopped
Coriander Leaves
Chutney Powder 

Heat the dosa tawa and spread some oil or ghee
Pour a laddle full of batter and spread well.
Sprinkle some chutney powder on the dosa
Beat an egg slightly and pour it on the dosa and spread well.
Now add some onion, tomato, green chilly and coriander leaves.
Sprinkle some more chutney powder if needed .
Drizzle some ghee or oil and cook in low flame for 2 to 3 minutes. Here I used olive oil.
Now carefully flip and cook for another minute and serve hot. 

If you don't have chutney powder use pepper powder or chilly powder. 

ദോശ മാവ് : ഒരു കപ്പ്
മുട്ട : 3
സവാള : 1 ചെറുതായി അരിഞ്ഞത് 
പച്ചമുളക് : 2 ചെറുതായി അരിഞ്ഞത് 
തക്കാളി : 1 ചെറുതായി അരിഞ്ഞത് 
മല്ലിയില 
ദോശ പൊടി / ചമ്മന്തി പൊടി

ദോശ കല്ല് ചൂടാക്കി അല്പം നെയ്യോ എണ്ണയോ തടവി മാവി ഒഴിച്ച് പരത്തുക. 
മുകളിൽ കുറച്ചു ദോശ പൊടി വിതറുക. 
ഇതിലേയ്ക്കു ഒരു മുട്ട പൊട്ടിച്ചു ഒന്ന് ബീറ്റ് ചെയ്ത് ഒഴിക്കുക. 
എല്ലാ ഭാഗത്തേക്കും നന്നായി പരത്തി കൊടുക്കുക. 
കുറച്ചു സവാള, തക്കാളി, പച്ചമുളക്, മല്ലി ഇല എന്നിവ  വിതറുക. 
മുകളിൽ ഒരല്പം കൂടി പൊടി വേണമെങ്കിൽ വിതറാം. 
അല്പം നെയ്യോ എണ്ണയോ കൂടി മുകളിൽ ഒഴിച്ച് ചെറിയ തീയിൽ വെച്ച് 2 - 3 മിനിറ്റ് വേവിക്കുക.(ഞാൻ ഒലിവ് ഓയിൽ ആണ് ചേർത്തത്)
ശേഷം സാവാദനം മറിച്ചിട്ട് ഒരു മിനിറ്റ് കൂടി വേവിച്ച ശേഷം ചൂടോടെ സെർവ് ചെയ്യാം.

Garlic Chutney // വെളുത്തുള്ളി ചട്ട്ണി

A Spicy chutney for dosa and rice...
To a pan add 2 tea spoon of coconut oil. 
Add 10 cloves of garlic, one small piece of ginger, 10 dry chili and roast in low flame for 10 minutes
Switch off the flame and let it cool for some time and then add little water, half tea spoon sugar and osme salt and grind it to a fine paste
To a pan add 2 tea spoon coconut oil and splutter some mustard seeds. Add the ground mix to this and saute until oil starts to separate. 
10 വലിയ അല്ലി വെളുത്തുള്ളി , ഒരു ചെറിയ കഷ്ണം ഇഞ്ചി, 10 വറ്റൽ മുളക് എന്നിവ 2 ടീ സ്പൂണ് വെളിച്ചെണ്ണ ചേർത്തു 10 മിനുറ്റ് ചെറിയ തീയിൽ വഴറ്റുക. ചൂട് മാറിയ ശേഷം കുറച്ചു വെള്ളം , ആവശ്യത്തിന് ഉപ്പ്, അര ടീ സ്പൂണ് പഞ്ചസാര എന്നിവ ചേർത്ത്  നന്നായി അരച്ചെടുക്കുക. ഒരു പാനിൽ 2 ടീ സ്പൂണ് വെളിച്ചെണ്ണ ചേർത്തു കടുക് പൊട്ടിക്കുക. ഇതിലേക്ക് അരച്ചു വെച്ച പേസ്റ്റ് ചേർത്തു എണ്ണ തെളിയും വരെ വഴറ്റി എടുക്കുക. വെളുത്തുള്ളി ചട്ട്ണി റെഡി

Idli / Dosa Batter // ഇഡലി / ദോശ മാവ്

To make Dosa/Idli Batter

Raw White Rice/Pachari: 1.5 Cup
Urad dal (without skin): 1/2 cup
Cooked Rice: 1/2 Cup
Fenugreek seeds: 4 - 5
Salt 
Water

Wash and soak white rice and  urad dal and fenugreek seeds in enough water for 5 to 6 hours.
Grind everything together at night adding cooked rice and water until smooth 
The batter should be smooth pouring consistency
Leave it overnight to ferment. 
Next morning add required salt.
The batter is ready to make idli, plain dosa, ghee roast, masala dosa etc
Before making the dosa check the consistency of the batter and add water if required
പച്ചരി : 1.5 കപ്പ്
ഉഴുന്ന് : 1/2 കപ്പ്
ചോറ് : 1/2 കപ്പ്
ഉലുവ : 4 - 5 എണ്ണം
ഉപ്പ്
വെള്ളം 

പച്ചരിയും ഉഴുന്നും നന്നായി കഴുകി ആവശ്യത്തിനു വെള്ളം ഒഴിച്ചു ഒരു 5 - 6 മണിക്കൂർ കുതിർത്തു വെക്കുക. ഉലുവയും ചേർക്കണം. 
ചോറു കൂടി ചേർത്ത് രാത്രി അരച്ചു വെക്കുക. 
രാവിലെ ആവശ്യത്തിനു ഉപ്പ് ചേർക്കുക 
ഇഡലി, ദോശ,മസാല ദോശ എല്ലാം ഉണ്ടാക്കാം 
ദോശമാവിന് ഒരൽപം വെള്ളം വേണമെങ്കിൽ ചേർക്കുക

Rava Dosa

Have it for breakfast or lunch...
Ingredients

Roasted Rava/Semolina: 1 Cup
Roasted Rice Flour: 1 Cup
Atta: 1/2 Cup
For Seasoning
Oil: 2 Table Spoon
Urud Dal: 1/4 Tea Spoon
Cumin Seeds: 1/4 Tea Spoon
Onion: 1
Green Chilly: 2 - 3
Ginger: 1 Small Piece
Asafoetida Powder: 1/4 Tea Spoon
Mint Leaves: Few
Coriander Leaves: Few
Curry Leaves: Few
Salt
Water

Cooking Time: 2 - 3 Minutes Per dosa
Method

To a bowl add rava, rice flour, atta and salt
Add water as required and make a thin batter
Chop onion, ginger, green chillies, curry leaves, coriander leaves and mint leaves
To a pan pour oil and add urud dal
Once it starts to change color add cumin seeds,
Add chopped ginger, green chilly and onion
Saute well for some time and switch off the flame and add asafoetida powder, chopped mint, coriander and curry leaves
Add this to the dosa batter
Combine well and keep the batter aside for 10 to 15 minutes
Heat a tawa and pour a laddle full of batter and swirl to all sides
Drizzle some oil or ghee if required
When one side is done flip and cook the other side
Serve hot with chutney or sambhar.  You can eat even with out any curry

Mixed Lentils Pan Cake

Lets make a healthy breakfast...
Ingredients

Green gram: 1/4 Cup
Toor Dal: 1/4 Cup
Black Eyed Beans: 1/4 Cup
Red Lentil/Masore Dal: 1/4 Cup
Brown Peas/Vanpayar: 1/4Cup
Shallots: 3 - 4
Garlic: 1 - 2
Green Chilly: 1- 2
Ginger: 1 small piece
Red Chilly Powder: 1/2 Tea Spoon
Turmeric Powder: 1/4 Tea Spoon
Asafoetida: 1/4 Tea Spoon
Water
Salt

Preparation Time: Over Night
Cooking Time : 5 minutes Per Pan cake

Wash and soak green gram, toor dal, black eyed beans, masore dal and vanpayar in enough water overnight
Next morning wash again and strain off the water and put this to a mixer along with shallots, garlic, ginger, green chilly, red chilly powder, turmeric powder, asafoetida and salt
Add some water and grind this to a smooth batter
Batter consistency should be same as dosa batter
Heat a non stick tawa and pour a laddle of batter and spread it little
Cook on medium heat and when one side is done flip it and cook the other side
Serve hot with chutney, sambhar or any curry of your choice.

Instant Oats Dosa

Another Oats recipe ...
Ingredients

Oats: 1 Cup
Wheat flour: 3 Table Spoon
Salt
Water

Cooking Time: 5 minutes for 1 dosa
Method

Soak 1 cup oats in 1 cup of water for 5 minutes
Then grind this to a fine paste adding more water if required
To this add wheat flour and required salt and blend in well
The batter should be pouring consistency.  It should not be too thick or thin.
Heat a non stick or iron tawa, 
If using an iron tawa  add a drop of oil and rub on it. 
Once the tawa is heated, bring the flame to medium and pour a ladle of batter in the center.
Using the back of the ladle, spread the batter in a circular motion and make the dosa 
When one side is cooked well flip over and cook the other side too.  If you wish to you can drizzle little ghee or oil to make the dosa crispy
Serve hot with sambhar,  coconut chutney or any chutney of your choice

Note:
You can also powder the oats first and then make the batter by adding water
If the batter is thick or too thin you wont be able to make perfect dosas

Cherupayar Dosa / Green Gram Dosa

A Dosa full of Protein... :-)
Ingredients

Green Gram: 1 Cup
Green Chilly: 2 - 3
Ginger: 1 Small Piece
Shallots: 3 - 4
Asafoetida: 1 Pinch
Curry Leaves: few
Salt
Water

Cooking Time: 15 Minutes
Method

Wash and soak the green grams in enough water overnight or 5 to 6 hours
Grind green gram along with green chilly,ginger, shallots and curry leaves to a smooth batter adding little water
The batter should not be too thin or thick.  Same like dosa batter
Add required salt and asafoetida and mix well
Heat a non stick or iron tawa, 
If using an iron tawa  add a drop of oil and rub on it. 
Once the tawa is heated, bring the flame to medium and pour a ladle of batter in the center.
Using the back of the ladle, spread the batter in a circular motion and make the dosa 
When one side is cooked well flip over and cook the other side too.  If you wish to you can drizzle little ghee or oil 
Serve hot with coconut chutney or any chutney of your choice

Masala Dosa

Does it need an Introduction......

Ingredients

Dosa Batter: 2 Cups (For preparation of batter see notes)
Ghee: 3 Table Spoon

For Filling

Potato: 3
Carrot: 1 Small
Onion: 1
Green Chilly: 3
Ginger: 1 small piece
Turmeric Powder: 1/2 Tea Spoon
Oil: 2 Table Spoon
Mustard Seeds: 1/4 Tea Spoon
Chana Dal: 1/2 Tea Spoon (Optional)
Coriander leaves
Curry Leaves
Salt
Water

Cooking Time: 25 minutes
Method

Filling
Chop carrots, onion, green chilly and ginger
Boil the potatoes and mash it and keep aside
Mashed Potatoes
To a pan pour oil and add mustard seeds, Once it begins to splutter add chana dal 
Once the chana dal becomes golden brown in color add chopped ginger and green chilly and saute for a few seconds
Then add chopped onion and saute till it becomes translucent
To this add chopped carrots, turmeric powder, salt and curry leaves
Reduce the flame and allow the carrots to cook well
Now add mashed potatoes and stir well
Add coriander leaves and switch off the flame
Making dosa 
Heat a non stick or iron tawa, 
If using an iron tawa  add a drop of oil and rub on it. 
Once the tawa is heated, bring the flame to medium and pour a ladle of batter in the center.
Using the back of the ladle, spread the batter in a circular motion and make the dosa
Drizzle little ghee on the dosa 
Dosa should not be thick.  Try to make it as thin as possible
We don't flip the dosa.  So for the dosa to be cooked evenly it should be thin and should be cooked in medium flame.
When you see the dosa starts slightly browning  in the edges dosa is ready.
Combining Dosa and masala
Once the dosa is cooked spread a laddle full of the masala in the center
Now close the dosa to half
Remove from tawa and serve hot with chutney, sambhar or both
Notes:
If you wish to you can allow the dosa to become golden brown in color.

To make dosa batter

Par boiled Rice/Idli Rice: 1 cup
Raw rice: 1/2 cup
Urad dal (without skin): 1/2 cup

Elanchi/Mutta Churul/Pancake/Maida Dosa


Tasty, Quick and Easy to make evening snack.An Indian twist and roll of pan cake :)
 

Ingredients (Serves 3 to 4 people)

Flour: 2 Cups
Egg: 1
Water
Salt
Grated Coconut: 1 Cup
Sugar: 2 - 3 Table Spoon
Cardamom Powder: 1/4 Tea Spoon
Ghee

Cooking time: 5 to 10 minutes
Method

Mix the grated coconut, sugar and cardamom powder.
Beat the egg well.  To this add the flour and required salt and mix well
Add water slowly and make it a smooth batter
Consistency of the batter  is same like dosa batter.
Make medium size dosa using the batter
Brush a little ghee on top of it and add the coconut mix in the middle and roll it out

Note

Can try out variations by adding dry fruits and dates
To make it even more tastier add milk or coconut milk instead of adding water to the flour
