Soya Chunks and Vegetable Biriyani

Here is the 100th :). It's veg, yet tastes like non veg. Tasty yet fit for the diet conscious..Isn't this the apt choice for the 100th?

Ingredients (Serve 2 to 3 People)

Basmati / Biriyani Rice: 500gms
Chopped Carrots: 1/2 Cup
Chopped Beans: 1/2 Cup
Green Peas: 1/2 Cup
Soya Chunks: 1 Cup
Bread slices: 3 - 4
Ginger : 25gm
Garlic : 25gm
Green Chillies : 50gm
Coriander Leaves : 50gm
Mint Leaves : 25gm
Tomato : 2 nos
Onion  : 4 nos (includes 1 for garnishing)
Cashew : as necessary
Raisins : as necessary
Cloves : 5 nos
Cardamom: 3 nos
Cinnamon :  2 nos
Curry Leaves : as necessary
Ghee : 6 table spoon (3+3)
Oil : 3 table spoon
Salt : to taste
Turmeric powder : 1 pinch
Chilli powder : 1/ 4 table spoon
Garam masala : 1/4 tea spoon
Lemon : 2 nos

Cooking Time : 40 Minutes

Method:
Soak soya chunks in water and keep aside
Crush ginger, garlic, green chillies, coriander leaves and mint leaves.
Chop onion and  tomato.
To a pan add little oil and saute 2 onions till it cooks
To this add crushed ginger, garlic and green chilly and saute for 2 to 3 minutes
Now add chopped carrots, beans and green peas and salt
Squeeze water from the soya chunks and add it too
Saute the mixture for around 3 to 5 minutes
Then add the required water and cook the mixture well.
Now add crushed coriander leaves and mint leaves and give a good stir and switch off the flame
Wash the rice.
To a pan add 3 table spoons of ghee and 3 table spoons of oil.Add cardamom, cloves and cinnamon to it
Now add rice and fry the rice till it starts to pop.
Take double ratio of water to rice.That is, for 1 glass of rice, 2 glass of water.
Boil water and pour it to rice
Add a pinch of turmeric, garam masala powder, salt to taste and squeeze a lemon.
Stir well and cook rice in low flame.
Once the rice cooks well add the veg masala  and mix well
Close the lid and keep in low flame for another 5 to 10 more minutes
Serve hot

To garnish :
Fry 1 onion , cashew and raisins
Chop the bread slices into cubes and fry in oil till golden brown
Dice few coriander  leaves.
Add little lime juice

Note

If you want to reduce the amount of oil / ghee you can pressure cook the rice and then mix the vegetable masala
But make sure that the rice does not over cook and become mushy

Chilli Soya Chunks

Tasty and delicious and Healthy too...Try it out! Highly recommended :)
 


Ingredients (Serves 2 to 3 people)

Soya Chunks: 200gms
Onion: 1
Green Capsicum: 2
Vegetable Oil: 4 Table Spoon
Soya Sauce: 2 Table Spoon
Chilli Sauce: 3 Table Spoon
Tomato Sauce: 2 Table Spoon
Corn Flour: 2 Table Spoon
Crushed Ginger: 1 ½  Table Spoon
Crushed Garlic: 1 ½  Table Spoon
White Pepper Powder :  1/2 Table Spoon (Can increase if required)
Salt
Water

Cooking Time: 25 to 30 minutes
Method

Soak the soya chunks in water for about 10 to 15 minutes.
Wash it well and cook it adding salt
Strain off the water and add corn flour and 1/4 table spoon of pepper powder to it and marinate it well
Pour oil to a pan and shallow fry the marinated soya chunks till it becomes slightly golden brown in color
Remove from pan and keep aside
To the same pan add crushed ginger and garlic and saute for 2 to 3 minutes
Then add chopped onion and saute for about 5 to 6 minutes.  (No need to cook until onion becomes brown)
Now add Chopped capsicum and stir well and saute for 4 to 5 minutes
To this add soya sauce, chilli sauce, tomato sauce, salt and 1/4 table spoon of white pepper powder and saute till it blends in well
Add the fried soya chunks to this give a good stir, close the lid and keep in low flame for about 8 to 10 minutes
Stir in between so that all the sauces gets into the soya chunks
Serve hot.

Note

You can deep fry the soya chunks if required
You can  add chopped spring onions too
Do not finely chop onion and capsicum
If required can add a pinch of ajinomotto before switching off the flame
Be careful while adding salt as the sauces already contains salt

Soya Chunks Cutlet

Simple - Tasty - Nutritious. Let us make soya chunks cutlets :)


 Ingredients (Makes 8 to 9 pieces)
Soya Chunks (Meal Maker): 250gms
Cooked Rice: 1 Cup
Potato: 1
Carrots: 2 - 3
Green Peas: 1/2 Cup
Green Chillies: 4 - 5
Onion: 1
Ginger Crushed: 1 Table Spoon
Curry Leaves
Corriander
Salt
Red Chilli Powder: 1 Tea Spoon
Black Pepper Powder: 1 Tea Spoon
Crushed soya chunks
Turmeric Powder: 1/4 Tea Spoon
Meat Masala: 1/2 Tea Spoon
Oil: For Frying
Water
Corn flour: 2 Table Spoon or Egg :1
Bread Crumps
Mashed rice
Cooking Time: 30 minutes
Method
Wash the soya chunks well
Boil 2 cups of water
To this add soya chunks and keep it aside for 10 - 15 minutes
Remove soya chunks from water and squeeze off all the water from it
Cook the soya chunks in water adding little salt and a pinch of turmeric powder
Cook potato, carrot and green peas and mash it with a spoon
Mash the rice also, if required use a mixer
Once the soya chunks gets cooled put it to a mixer and crush it, no need to make a fine paste
Pour oil to a pan add chopped green chillies, crushed ginger and chopped onion
Once the onion gets cooked add turmeric powder, red chilli powder, black pepper powder, meat masala and required salt and saute well
To this add crushed soya chunks and mashed potatos, carrots, green peas and rice
To this add curry leaves and corriander leaves
Mix every thing very well
Mix the corn flour in water, do not make it too thin or thick (If using egg beat the egg well)
Once the mixture gets cooled take some of the mixture and roll it to the required shape
Dip in corn flour paste and roll in bread crumps and fry in oil.
